- In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.
- Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
- Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks.

- Melt shortening and let cool. Add 1 c sugar, molasses and egg. Beat well.
- Sift dry ingredients, except the remaining sugar. Add to first mixture. Mix well.
- Chill at least 1 hour. (Don't skip this step!).
- Form in 1 inch balls and roll in remaining sugar. Bake at 375 degrees for 8-10 minutes on greased cookie sheets. (As low as 7 minutes in a convection oven).
- NOTE: To get the texture just right, follow the directions closely. Specifically three things: don't substitute butter or margarine for the shortening, melt the shortening, and hand form the cookies.

- 1. Preheat oven to 350 degrees. Cream crisco shortening and sugar. Add molasses and eggs. Mix well. Then add water and vanilla and mix.
- 2. Add dry ingredients, flour, soda, salt, ginger, and cinnamon. Mix well until all is blended together. Drop by tablespoon full onto greased cookie sheet or line your pan with parchment paper for easy cleanup. (I used a small ice cream scoop to drop my mixture). Bake for 9 minutes. Do not overbake. Ovens vary and I have a new oven and it took 9 minutes. You may want to check at 7 minutes if you do smaller cookies. Let cool and frost.
- 3. This is a creamy mixture and makes a lot of cookies. These cookies freeze very well.
- 4. For frosting.....I just used 1 stick of butter, 3 cups of powdered sugar, 1 teaspoon of vanilla extract and 2 tablespoons of milk. Mix well and frost your cooled cookies.
