Time 25m

Number Of Ingredients 11

1 c crisco shortening
1 c sugar
3/4 c molasses ( i used grandmas original )
2 large eggs
1 c cold water
4 c all purpose flour
2 tsp baking soda
1 tsp salt
1 tsp ginger
1 tsp cinnamon
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees. Cream crisco shortening and sugar. Add molasses and eggs. Mix well. Then add water and vanilla and mix.
  • 2. Add dry ingredients, flour, soda, salt, ginger, and cinnamon. Mix well until all is blended together. Drop by tablespoon full onto greased cookie sheet or line your pan with parchment paper for easy cleanup. (I used a small ice cream scoop to drop my mixture). Bake for 9 minutes. Do not overbake. Ovens vary and I have a new oven and it took 9 minutes. You may want to check at 7 minutes if you do smaller cookies. Let cool and frost.
  • 3. This is a creamy mixture and makes a lot of cookies. These cookies freeze very well.
  • 4. For frosting.....I just used 1 stick of butter, 3 cups of powdered sugar, 1 teaspoon of vanilla extract and 2 tablespoons of milk. Mix well and frost your cooled cookies.

VEGAN MOLASSES COOKIES

Vegan Molasses Cookies image

These cookies have the same taste, look, and texture of the non-vegan ones. And no chill time. Very fast and easy to put together. Make sure you drain the apple sauce from most of its water content BEFORE measuring. I just put some on a paper towel and patted it.

Time 20m

Yield 14 cookies, 14 serving(s)

Number Of Ingredients 14

1 cup flour (145 grams)
2 tablespoons flour (145 grams)
1 teaspoon baking soda (5 ml)
1/2 teaspoon cinnamon (2.5 ml)
1/2 teaspoon ginger (2.5 ml)
1/4 teaspoon clove (1.25 ml)
1/8 teaspoon salt (.6 ml)
1/2 cup packed brown sugar (99 grams)
6 tablespoons vegetable oil (90 ml)
2 tablespoons molasses (30 ml)
1/2 teaspoon vanilla extract (2.5 ml)
2 tablespoons unsweetened applesauce
3 tablespoons sugar, for rolling
1 tablespoon course sugar

Steps:

  • Preheat oven to 325 degrees F or 165 degrees Celsius.
  • In a mixing bowl, stir together flour, baking soda, cinnamon, ginger, cloves and salt.
  • In a second bowl, mix brown sugar, vegetable oil, molasses, vanilla and apple sauce.
  • Add flour mixture to brown sugar mixture and stir until mixed. Using a tablespoon measure, scoop up dough and form nice mounds. Place the mounds about 2 ½ inches apart on an ungreased cookie sheet (Silpat is okay) and sprinkle tops with sparkly sugar (I actually rolled the dough into balls and rolled them in sugar. When i put my cookies on the baking sheet i pressed them down with my fingers). Bake for 13-16 minutes. Let cool for 2 minute on sheet, then transfer to wire rack to cool.

Tips:

  • Choosing the right applesauce: For the best flavor and texture, use unsweetened applesauce. If you only have sweetened applesauce, reduce the amount of sugar in the recipe by 1/4 cup.
  • Measuring the flour: Be sure to spoon and level the flour when measuring it. Scooping the flour directly from the bag can result in too much flour being added, which can make the cookies dry and crumbly.
  • Chilling the dough: Chilling the dough for at least 30 minutes before baking helps to develop the flavor and prevent the cookies from spreading too much in the oven.
  • Baking the cookies: Bake the cookies until the edges are golden brown and the centers are set. Overbaking will make the cookies dry and crumbly.
  • Storing the cookies: Store the cookies in an airtight container at room temperature for up to 3 days. The cookies can also be frozen for up to 2 months.

Conclusion:

Mom's Molasses Applesauce Cookies are a delicious and easy-to-make treat that is perfect for any occasion. With their chewy texture, sweet and tangy flavor, and classic spices, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a simple and delicious cookie recipe, give these molasses applesauce cookies a try. You won't be disappointed!
