AUTHENTIC GERMAN POTATO SALAD

Authentic German Potato Salad image

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

My grandmother, Mama, made this potato salad for every family gathering at her home. The relatives would arrive with their specialties in hand. She never wrote the recipe down, so I had to re-create it from memory. Years later, it's just about right. -Charlene Chambers, Ormond Beach, Florida

Tips:

  • Use Waxy Potatoes: Opt for waxy potato varieties like Yukon Gold, red potatoes, or fingerling potatoes. Their firm texture holds its shape well in the salad.
  • Boil Potatoes Properly: Ensure the potatoes are fully cooked but not overcooked to prevent them from becoming mushy. Insert a fork or knife to check for tenderness.
  • Prepare Potatoes in Advance: To save time, boil the potatoes a day before and refrigerate them overnight. This allows them to firm up and makes slicing easier.
  • Use Homemade Mayonnaise: If you have the time, making your own mayonnaise adds a rich, creamy texture to the salad. It's easy to prepare and worth the extra effort.
  • Enhance Flavor with Herbs: Fresh herbs like chives, parsley, or dill add a burst of flavor and color to the salad. Use a generous amount to elevate the taste.
  • Don't Overdress the Salad: While you want the salad to be flavorful, avoid using too much dressing. A light coating is enough to enhance the taste without overpowering the other ingredients.
  • Serve Warm or Cold: Mom's Hot German Potato Salad is delicious served warm or cold. If serving cold, let it chill for at least an hour to allow the flavors to meld.

Conclusion:

Mom's Hot German Potato Salad is a delightful and versatile dish that can be enjoyed as a side dish or a main course.
