MOM'S FAMOUS MEATLOAF

Mom's Famous Meatloaf image

Yeah, I know...there's tons of meatloaf recipes out there, but I bet this is one of the easiest ones with lots of taste out there! I got this from a Kraft recipe booklet I got in the mail that I've tweaked a bit and it's pretty simple yet yummy.

Time 1h35m

Yield 10-12 serving(s)

Number Of Ingredients 5

2 lbs ground beef
1 (6 ounce) package chicken flavor stuffing mix
1 cup water
2 eggs, beaten
1/2 cup barbecue sauce

Steps:

  • Heat oven to 375 degrees.
  • In bowl, mix all ingredients except for 1/4 cup of the BBQ sauce. I use Sweet Baby Ray's.
  • Line glass cake pan with tin foil.
  • Put meat mixture into pan and shape into a loaf.
  • Cover loaf with rest of BBQ sauce.
  • Bake for 1.5 hours or until there's an internal temperature of 160 degrees.
  • I usually make this and freeze it for members of my church who are sick and need help with cooking, so if it is frozen, it will need to be put in the oven (about the same temp.) for around 30-40 minute.

Tips:

  • Use a combination of ground beef and ground pork: This will give your meatloaf a more flavorful and moist texture.
  • Don't overmix the meatloaf mixture: Overmixing will make the meatloaf tough. Just mix until the ingredients are combined.
  • Add some bread crumbs or crackers to the meatloaf mixture: This will help to absorb some of the moisture and keep the meatloaf from becoming too dense.
  • Use a loaf pan that is the right size for your meatloaf: A loaf pan that is too small will cause the meatloaf to overflow, and a loaf pan that is too large will make the meatloaf too thin.
  • Bake the meatloaf at a moderate temperature: A temperature of 350 degrees Fahrenheit is ideal.
  • Cook the meatloaf until it reaches an internal temperature of 160 degrees Fahrenheit: This will ensure that the meatloaf is cooked through.
  • Let the meatloaf rest for a few minutes before slicing and serving: This will help the meatloaf to retain its juices.

Conclusion:

Mom's Famous Meatloaf is a classic comfort food that is easy to make and always a hit with the family. With its flavorful and moist texture, this meatloaf is sure to become a favorite in your household. So next time you're looking for a delicious and easy weeknight meal, give Mom's Famous Meatloaf a try. You won't be disappointed!
