When it comes to mashed potatoes recipes, this is one of my favorites because they can be made ahead, refrigerated and then popped into the oven just prior to dinnertime. When my grandchildren come for dinner, I have to double this recipe. They love it! -Vivian Bailey, Cedar Falls, Iowa

Number Of Ingredients 6

3 1/2 pounds white or Yukon Gold potatoes
Kosher salt and freshly ground pepper
8 ounces cream cheese, softened
1 stick unsalted butter, room temperature
1/4 cup whole milk, warmed
1/2 cup heavy cream, warmed

Steps:

  • Place potatoes and 1 tablespoon salt in a medium pot, cover with cold water by 2 inches, and bring to a boil. Reduce heat, cover partially, and simmer until potatoes are tender, about 35 minutes. Drain, and let stand until just cool enough to handle. Rub off skins, and discard. Cut potatoes into large pieces.
  • Combine potatoes, cream cheese, butter, milk, and 1/4 cup cream in a mixer bowl fitted with the paddle attachment. Beat until combined. Season with salt and pepper, and beat to desired consistency.
  • Return mashed potatoes to pot, and place over medium heat. Add remaining cream, and cook, stirring constantly, until heated through. Serve immediately, or keep warm in a covered bowl over simmering water for up to 2 hours.

Tips:

  • For a creamier texture, use Yukon Gold or russet potatoes.
  • Peel and cut the potatoes into evenly sized pieces for even cooking.
  • Cook the potatoes in salted water until they are tender and can be easily pierced with a fork.
  • Drain the potatoes well and return them to the pot.
  • Add the milk, butter, sour cream, and seasonings to the potatoes and mash until smooth.
  • For a richer flavor, use heavy cream instead of milk.
  • Add a dollop of sour cream or crème fraîche to the top of each serving.
  • Garnish with chopped fresh herbs, such as chives, parsley, or dill.
  • For a cheesy mashed potato dish, add shredded cheddar, Parmesan, or Gruyère cheese.
  • For a bacon-flavored mashed potato dish, add cooked and crumbled bacon.
