Molasses Refrigerator Muffins image

This is an orphan recipe that I adopted from Recipezaar. When I made them, I used buttermilk, but I'd like to try them again with the sour milk. The only other thing was I didn't cook the first batch quite long enough and they sank in the middle. Was still good.

Tips:

  • Use fresh ingredients: Fresh molasses and raisins will give your muffins the best flavor. If you don't have fresh molasses, you can substitute dark corn syrup, but the flavor will be slightly different.
  • Don't overmix the batter: Overmixing the batter will make the muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups evenly: This will help the muffins bake evenly.
  • Bake the muffins at a high temperature: This will help them rise quickly and give them a crispy crust.
  • Let the muffins cool completely before frosting them: This will help the frosting set properly.
