GRANDMA'S MOLASSES CORNBREAD

Provided by Junkintrunk

Categories     Quick Breads

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 cup cornmeal
1/2 cup flour
1 egg
1 cup milk
1/4 cup molasses
1/4 cup sugar
2 teaspoons butter, melted
1/4 teaspoon baking soda
2 teaspoons baking powder

Steps:

  • Mix all ingredients until well blended. Put in greased 9-inch round pan.
  • Bake at 425°F for 20-25 minutes. Cut in wedges, butter generously and enjoy!

Tips:

  • Choose the Right Molasses: For an authentic Southern flavor, use unsulphured molasses.
  • Properly Combine Dry Ingredients: Ensure the cornmeal, flour, sugar, baking powder, and salt are evenly mixed to avoid pockets of unmixed ingredients.
  • Activate the Baking Soda: Mixing the baking soda with boiling water creates a chemical reaction that helps the cornbread rise.
  • Gradually Add Wet Ingredients: Slowly pour the wet ingredients into the dry ingredients while stirring to prevent lumps. Overmixing can result in a tough texture.
  • Pour Batter into a Well-Greased Pan: This step ensures the cornbread doesn't stick to the pan and comes out cleanly.
  • Bake at a High Temperature: Bake the cornbread at 425°F to get a crispy outer crust and a moist and fluffy interior.
  • Don't Overbake: Keep a close eye on the baking time. Overbaking can lead to dry and crumbly cornbread.
