1/4 teaspoon salt

1 tablespoon oil

1 cup sliced fresh strawberries
1 (11-oz.) can mandarin orange segments, drained
2 tablespoons sliced green onions

Steps:

  • In blender container, combine all vinaigrette ingredients. Cover; blend until smooth.

6 cups (200 g) mix of baby greens or fresh baby spinach
2 cups strawberries (, hulled and quartered (or other berries))
100 g/4 oz crumbled blue cheese ((such as Roquefort) or goat cheese (such as Sainte Maure))
1/2 cup chopped pecans or other nuts/candid nuts (, preferably toasted)
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon pure maple syrup or honey (, optional)
1/4 teaspoon table salt
1/4 teaspoon freshly ground black pepper

Steps:

  • To make the dressing: In a small bowl whisk oil, vinegar, mustard, maple syrup, salt, and pepper until well combined.

1 lb strawberry, hulled and halved (do not use frozen)
5 ounces mixed baby greens
1 cup feta cheese, crumbled
1/2 cup walnuts, toasted
1/2 cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon sugar (or you can use 2 packets of your favorite artificial sweetener)

Steps:

  • Mash enough strawberries to measure 1/3 cup. Place in a blender with the oil, vinegar and sugar and blend until well combined. Season dressing with salt and pepper, if desired.
