Yield Makes 4 to 6 servings

Number Of Ingredients 12

2 medium red beets, tops trimmed
2 medium golden beets, tops trimmed
3 blood oranges
1 medium navel orange (preferably Cara Cara)
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
1/2 small fennel bulb, very thinly sliced crosswise on a mandoline
1/4 red onion, very thinly sliced on a mandoline (about 1/3 cup)
Good-quality extra-virgin olive, pumpkin seed, or walnut oil (for drizzling)
Coarse sea salt, such as fleur de sel or Maldon sea salt
freshly ground black pepper
1/4 cup loosely packed fresh cilantro and/or chervil leaves

Steps:

  • Preheat oven to 400°. Wash beets, leaving some water on skins. Wrap individually in foil; place on a rimmed baking sheet and roast until beets are tender when pierced with a knife, about 1 hour. Let cool.
  • Meanwhile, using a sharp knife, cut all peel and white pith from all oranges; discard. Working over a medium bowl, cut between membranes of 2 blood oranges to release segments into bowl; squeeze juice from membranes into bowl and discard membranes. Slice remaining blood orange and Cara Cara orange crosswise into thin rounds. Place sliced oranges in bowl with the segments. Add lemon juice and lime juice.
  • Peel cooled beets. Slice 2 beets crosswise into thin rounds. Cut remaining 2 beets into wedges. Strain citrus juices; reserve. Layer beets and oranges on plates, dividing evenly. Arrange fennel and onion over beets. Spoon reserved citrus juices over, then drizzle salad generously with oil. Season to taste with coarse sea salt and pepper. Let salad stand for 5 minutes to allow flavors to meld. Garnish salad with cilantro leaves.

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 12

1 bunch baby red beets, cleaned and trimmed
1 bunch baby golden beets, cleaned and trimmed
1 bunch baby candy-striped beets, cleaned and trimmed
3/4 cup red-wine vinegar
1 1/2 cups sugar
Coarse salt and freshly ground black pepper
6 blood oranges
1/4 cup plus 3 tablespoons chardonnay or champagne vinegar
1/4 cup plus 2 tablespoons olive oil
1 bulb fennel, trimmed and thinly sliced crosswise using a mandoline, fronds reserved and chopped
1 ounce shaved Chevrot cheese or crumbled Montrachet goat cheese
1 bunch arugula, preferably wild

Steps:

  • Preheat oven to 350 degrees. Place beets in a roasting pan. Pour over 8 cups water, red-wine vinegar, sugar, and 3 tablespoons salt. Cover with parchment-paper-lined foil and roast until tender, about 40 minutes.
  • Drain beets and peel by rubbing with a kitchen towel. Cut beets in half lengthwise; set aside.
  • Juice 4 blood oranges into a small pot. Place over low heat and cook until reduced by half; let cool.
  • Transfer juice reduction in the jar of a blender, along with 3 red baby beets and 1/4 cup chardonnay vinegar; blend until smooth. With the motor running, drizzle in 1/4 cup olive oil and blend until emulsified; season with salt and pepper. Strain through a fine sieve into a medium bowl; set aside.
  • Slice the top and bottom of remaining oranges with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the orange over a bowl, cut along both sides of each segment, staying close to the membrane, to release; set aside.
  • Toss the fennel slices, fronds, and arugula in a large bowl along with 2 tablespoons olive oil and 3 tablespoons chardonnay vinegar; season with salt and pepper. Divide evenly among 4 plates.
  • In a large bowl toss together remaining beets, orange segments, and half of the vinaigrette; season with salt and pepper. Evenly arrange on top of greens. Garnish with cheese and drizzle remaining vinaigrette around the perimeter of the salad.

FENNEL, BEET AND ORANGE SALAD WITH CUMIN VINAIGRETTE

Fennel, Beet and Orange Salad With Cumin Vinaigrette image

One of the things I love best about this refreshing salad is that it doesn't wilt, making it a a great choice for a potluck or a buffet. There's a nice contrast of textures going on, with the crunchy fennel, soft beets and juicy oranges. The dish has Moroccan overtones, with the combination of oranges and beets, and the cumin in the dressing.

Beet, Endive, and Orange Salad image

In this salad, sweet roasted beets and orange segments complement bitter endive.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 11

6 large beets, about 2 pounds, scrubbed and stems removed
6 navel oranges
1 tablespoon red-wine vinegar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 1/2 tablespoons canola oil
1 cup fresh flat-leaf parsley leaves, coarsely chopped
3 heads Bibb lettuce (1/2 pound), or 1 head Boston lettuce, cut into 1/2-inch strips
2 heads Belgian endive (about 1/2 pound), cut into 1/2-inch pieces
1/4 pound ricotta salata, or feta cheese, crumbled
Olive-oil cooking spray

Steps:

  • Heat oven to 450 degrees. Place beets in an 8-by-8-inch baking pan coated with olive-oil cooking spray; cover with foil. Place in oven; roast until tender, 45 to 55 minutes, depending on size. Allow beets to cool, remove skins, and cut into 3/4-inch chunks, reserving half a peeled beet for vinaigrette.

  • Place reserved half beet, reserved orange juice, red-wine vinegar, salt, and pepper in a blender; puree until smooth. With motor running, add canola oil, and process until combined. Stir in 2 tablespoons chopped parsley.
  • Place lettuce, endive, reserved beets, oranges, and remaining parsley in a bowl. Just before serving, add vinaigrette, and toss. Garnish with ricotta salata, and serve.

Nutrition Facts : Calories 157 g

Tips:

  • When selecting beets for the salad, choose firm, smooth beets with no blemishes. Smaller beets are usually more tender and flavorful.
  • To roast the beets, preheat the oven to 400°F (200°C). Toss the beets with olive oil, salt, and pepper. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 45 minutes to 1 hour, or until the beets are tender when pierced with a fork.
  • While the beets are roasting, prepare the blood orange segments. Cut off the top and bottom of the oranges. Score the oranges around the middle and peel off the skin. Cut the oranges into segments, removing any seeds.
  • To shave the fennel, use a mandoline or a sharp knife. Thinly slice the fennel bulb, discarding the core.
  • To assemble the salad, combine the roasted beets, blood orange segments, shaved fennel, and crumbled goat cheese in a bowl. Drizzle with a vinaigrette dressing made with olive oil, balsamic vinegar, salt, and pepper.

Conclusion:

This mixed baby beet salad with blood oranges, shaved fennel, and goat cheese is a delicious and healthy side dish or main course. The roasted beets are tender and sweet, the blood oranges are tart and juicy, the shaved fennel is crisp and refreshing, and the goat cheese adds a creamy and tangy flavor.
