2 cups cooked and mashed sweet potatoes
2 cups granulated sugar
1 small (5-ounce) can evaporated milk, about 1/2 cup plus 2 tablespoons
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared pie shells, unbaked

Steps:

1-2/3 cups sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg
Pinch salt
1 cup mashed sweet potatoes
2 large eggs, room temperature
1/2 cup butter, softened
1/4 cup light corn syrup
3/4 cup evaporated milk

  • Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, combine sugar, flour, nutmeg and salt.
