Time 1h30m

Number Of Ingredients 6

8 eggs, separated
10 1/2 oz sugar
2 Tbsp water
2 stick butter, melted
4 c lukewarm milk
1 1/2 c flour

Steps:

  • 1. Preheat oven to 325. Grease 9 x 13 pan. Set aside. Beat egg whites until stiff. Set aside. Beat egg yolk and sugar until light. Add water and melted butter. Gradually add flour. Mix well. Then add the lukewarm milk. Mix well.
  • 2. Fold one third of egg whites into egg yolk mixture. Fold until well incorporated. Fold in remaining egg whites, one third at a time. I had to use my whisk and gently break up some of the egg whites. Batter will be thin.
  • 3. Pour into greased pan. Bake at 325 for 60-70 minutes or until golden brown. After 60 minutes, mine kind of jiggled in the middle, so I did another ten minutes. Dust with powdered sugar if desired.

Tips for the Miracle Cake:

  1. Ensure all your ingredients are at room temperature before you start mixing. This will ensure that your cake batter emulsifies properly, resulting in a smooth and evenly textured cake.
  2. Do not overmix the batter. Overmixing can develop the gluten in the flour, resulting in a tough and dense cake. Mix just until the ingredients are combined.
  3. Bake the cake in a preheated oven. This will help the cake rise evenly and prevent it from sinking in the middle.
  4. Use a toothpick or cake tester to check if the cake is done. Insert it into the center of the cake; if it comes out clean, the cake is done. If not, continue baking for a few more minutes.
  5. Let the cake cool completely before frosting or decorating it. This will help prevent the frosting from melting and will make it easier to decorate the cake.

Conclusion: The Miracle Cake is a delicious, moist, and fluffy cake that is perfect for any occasion. With its simple ingredients and easy-to-follow instructions, this cake is a great choice for bakers of all skill levels. Whether you are a seasoned baker or just starting out, this cake is sure to impress your friends and family.
