Time 40m

Yield 36 cookies

Number Of Ingredients 7

3/4 pound unsalted butter at room temperature
1 cup granulated sugar
1 teaspoon pure vanilla extract
3 1/2 cups flour
1/4 teaspoon salt
3/4 cup good raspberry preserves
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough 1/4-inch thick and cut 2 3/4-inch rounds with a plain or fluted cutter. With 1/2 of the rounds, cut a hole from the middle of each round with a heart or spade shaped cutter. Place all the cookies on an ungreased baking sheet and chill for 15 minutes.
  • Bake the cookies for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature. Spread raspberry preserves on the flat side of each solid cookie. Dust the top of the cut-out cookies with confectioners' sugar and press the flat sides together, with the raspberry preserves in the middle and the confectioners' sugar on the top.

Tips:

  • Mise en Place: Always prepare and measure all your ingredients before starting to bake. This will ensure that you have everything you need and that you don't forget any important ingredients.
  • Use High-Quality Ingredients: The quality of your ingredients will greatly impact the taste of your cookies. Use real butter, pure vanilla extract, and high-quality chocolate chips for the best results.
  • Chill Your Dough: Chilling your cookie dough before baking will help the cookies hold their shape and prevent them from spreading too much. You can chill the dough for at least 30 minutes, or up to overnight.
  • Don't Overmix Your Dough: Overmixing your cookie dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Use a Cookie Scoop: A cookie scoop is a great way to ensure that your cookies are all the same size and shape. This will help them bake evenly.
  • Bake Your Cookies at the Right Temperature: The temperature of your oven will affect the texture of your cookies. Bake your cookies at the temperature specified in the recipe.
  • Let Your Cookies Cool Completely: Let your cookies cool completely on a wire rack before storing them. This will help them keep their shape and prevent them from becoming soggy.

Conclusion:

With these tips in mind, you're sure to bake delicious mini cookies that will be a hit with your family and friends. So get baking and enjoy the sweet rewards of your labor!
