1/2 cup butter (, cut into pieces )
1 cup light brown sugar (, packed )
1/4 cup light corn syrup
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Pinch salt

Steps:

  • Lay a piece of wax or parchment paper on the counter or on a baking sheet. Place popped popcorn in a large bowl. Set aside.
  • Place butter, brown sugar and corn syrup in a microwave safe bowl. Cook for one minute. Stir and cook two additional minutes for chewy popcorn balls. If you like crunchy popcorn balls, cook an additional minute. Remove from microwave. Stir in vanilla and baking soda.

6 small apples (about 2 1/2 inches in diameter)
1 pound caramel candies, unwrapped
3 tablespoons heavy cream
Rounded 1/4 teaspoon fine sea salt
Colorful sanding sugar, sprinkles, shredded coconut or finely chopped toasted nuts for garnish, optional

Steps:

  • Line a baking sheet with parchment paper and spray lightly with cooking spray.
  • Wash the apples well, then dry them thoroughly. Insert candy apple sticks into the stem end of the apples.

2/3 cup unpopped popcorn
2 sticks butter (1 cup)
2 cups brown sugar
1 cup light corn syrup
1/2 cup sweetened condenced milk
1/2 tsp sea salt
1/2 cup juice syrup ( 4 cups apple cider reduced to 1/2 cup)
2 tsp vanilla
2 tsp cream of tartar

Steps:

  • Cook 4 cups apple cider to a boil
  • Reduce and cook until reduced to 1/2 cup.
  • Juice will be a little syrupy
  • Air pop the popcorn kernels. Then sift or transfer bowls ensuring all kernels are removed.
  • Set aside and start making the caramel.
  • Combine Juice, butter, brown sugar, corn syrup, sweetened condensed milk and salt in 4 qt sauce pan
  • Bring to a boil
  • Reduce heat to below medium

1 cup unpopped popcorn
2 sticks butter (1 cup)

1 cup light corn syrup
1/2 cup sweetened condensed milk

2 tsp cream of tartar

Steps:

  • Bring 4 cups apple juice/cider to a boil
  • Reduce to medium/low heat and cook until reduced to 1/2 cup.
  • This usually takes approximately 1.5 hours
  • Juice will be a little syrupy
  • Air pop the popcorn kernels.
