  • Preheat a grill to high. Toss 1 pound baby bell peppers or quartered regular peppers with 2 tablespoons olive oil; season with salt and red pepper flakes. Grill, turning, until blistered, about 10 minutes. Transfer to a bowl and toss with 1 tablespoon olive oil, some chopped mint and the juice of 1/2 lemon. Top with crumbled feta.

1 roasted red pepper (jar) pat dry & dice
1 c all purpose flour, shifted with baking powder
2 tsp baking powder, shifted with flour
1 any color bell pepper, diced
1 tsp salt, maybe less due to feta cheese
2 tsp parsley, finely chopped
2/3 c milk
1/2 c butter, melted & lukewarm
1 egg
1/2 c feta cheese, crumbled
freshly ground pepper

Steps:

  • 1. Preheat oven at 33o degrees. Prepare 30 mini muffin cups, with mini muffin liners or grease & flour your muffin pan.
  • 2. With kitchen paper towel pat dry roasted pepper & dice. Shift flour & baking powder. Add peppers, salt & parsley.
  • 3. In another bowl whisk together the milk, butter & egg to combine Pour the wet ingredients in the center of the dry ingredients. With a wooden spoon or spatula lightly fold the wet ingredients into the dry ingredients to combine. Don't overmix.
  • 4. Half fill the muffin cups with the batter, add the feta cheese & then cover with some batter.
  • 5. If making mini muffins bake 12-15 minutes, till toothpick comes out clean. Let cool & ENJOY!
  • 6. TIP:: 1. If you don't have a miNi muffin pan you could use a regular muffin pan, where you will make 15 muffins, like my picture.

  • In a small skillet, saute peppers in oil for 5 minutes or until tender; cool slightly. In a bowl, combine the cornmeal, flour, sugar, baking powder, baking soda and salt. In a small bowl, whisk the egg, buttermilk, butter and peppers until blended. Stir into dry ingredients just until moistened., Fill paper-lined miniature muffin cups three-fourths full. 275 g plain flour
1 tablespoon baking powder
1 teaspoon salt
1 egg
225 ml milk
1 tablespoon butter
1 medium onion, finely chopped
100 g feta cheese, chopped into small cubes
1 tablespoon chopped fresh rosemary
fresh ground black pepper
1 egg, lightly beaten

Steps:

  • You will need a 12 hole mini-muffin tin.
  • Melt the butter in a small saucepan, add in the chopped onion and cook for about 5 minutes till its softened and then remove from heat and leave it to cool.
  • Once cool, add in the chopped feta cheese and rosemary and season with freshly ground black pepper (there is no need for salt since feta cheese is quite salty by itself) and give it a good mix.
  • Pre-heat the oven to gas mark 6/400F/200°C.
  • Next for the muffin base, sift the flour, baking powder and salt into a large mixing bowl.
  • In another bowl beat the egg, then add in the milk and give it a good whisk again.
  • Next, pour the egg mixture into the flour, using minimum number of folding movements (you should finish folding in 15 seconds and ignore the lumps in the mixture - do not overmix).
  • Now gently add the onion mixture into the muffin mixture, folding in, as before, with as few strokes as possible.
  • Arrange the muffin cases into the muffin tins them spoon the mixture into them.
  • You may even spoon the mixture straight into the tins but they will have to be well-greased.
  • Beat the second egg and brush the muffin tops with it.
  • Bake them in the centre shelf of the oven for about 20 minutes, or until well risen and golden.
  • Remove the muffins from the tins and serve immediately.

I recently got two pounds of mini bell peppers at Costco, and after eating about half of them raw (yum! they're so sweet and tasty!) we got to the point where I needed to find something else to do with them. Here's what I came up with, and having just eaten one, I can assure you they're absolutely delicious! These can be either baked (which I usually do), or eaten uncooked.

1 lb orange bell peppers or 1 lb yellow bell pepper
1 1/2 cups crumbled feta cheese
2 tablespoons sherry wine
1/3 cup finely grated parmesan cheese
1/2 teaspoon minced dried basil or 1 tablespoon minced fresh basil
1/4 teaspoon cumin
1/4 teaspoon dried ancho chile powder
1/2 teaspoon garlic powder
1/4 teaspoon salt or 1/4 teaspoon salt or seasoning salt, to taste (I use Johnny's)

Steps:

  • Cut the tops off the mini bell peppers and take out the seeds and larger white veins; rinse out with water, then set aside.
  • Put the crumbled feta cheese in a bowl and add the sherry; toss to coat.
  • Mix together well the remaining ingredients in a separate bowl, then add the mixture to the feta cheese and toss to mix them all well.
  • Spray a large casserole dish (I use a large oval white Corning Ware) with an olive oil mister or pan spray.
  • Preheat oven to 350 degrees F.
  • Stuff each mini bell pepper with the herbed feta mixture, making sure there's a good amount of feta in each pepper; place peppers in the casserole dish.
  • When all peppers are stuffed, place cover on casserole dish and bake in oven for 30 to 45 minutes until peppers are nice and soft and the cheese is melted. If too much of the cheese melts out of the peppers, use a spoon to put it back in. :)
  • Serve and enjoy!
