2 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
2 large eggs, beaten
1 cup prepared mincemeat
1/3 cup applesauce
1/3 cup apple juice
3 tablespoons butter, melted
LEMON SAUCE:
1/2 cup sugar
4-1/2 teaspoons cornstarch
1 cup water
2 tablespoons butter
1-1/2 teaspoons grated lemon zest
1 teaspoon lemon juice

Steps:

  • In a large bowl, combine the flour, brown sugar, baking powder, baking soda, cinnamon and cloves. In another bowl, combine the eggs, mincemeat, applesauce, juice and butter; stir into dry ingredients just until moistened. , Pour into a greased 9-in. fluted tube pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. , For sauce, combine sugar and cornstarch in a saucepan. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in butter until melted. Add lemon zest and juice. Serve warm with the cake.

3 cups biscuit mix
3 tablespoons granulated sugar
2/3 cup milk
1/2 cup orange marmalade
1 1/3 cups mincemeat
1 cup powdered sugar, sifted
1 1/2 tablespoons milk
1/2 teaspoon orange extract

Steps:

  • Preheat oven to 350 degrees F, then grease a 9" cake pan.
  • Combine biscuit mix & sugar, then add milk, stirring to make a soft dough.
  • On lightly floured board, roll out dough into 12"x10" rectangle.
  • Combine marmalade & mincemeat, & spread mixture evenly over dough, to within 1/2 inch of edges.
  • Roll jelly-roll-fashion, then cut into 10 pieces.
  • Place pieces in prepared cake pan, more or less with 9 in a ring & 1 in the center.
  • Bake until lightly browned, about 30-40 minutes.
  • Remove from pan.
  • Combine powdered sugar, 1 1/2 tablespoons milk & orange extract, & frost the warm cake with this mixture.
  • Serve warm or cold.

1 c butter, softened
1 1/2 c sugar
1 1/2 tsp vanilla
1/2 tsp orange zest
4 eggs
3 c flour
1 1/2 tsp baking powder
2 c mincemeat, home made or store bought
1 c powdered sugar
2 Tbsp orange juice

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 9" x 13" baking pan and set aside.
  • 2. In a large mixer bowl, cream the butter and sugar until completely mixed, add the vanilla and orange zest. Add the eggs, one at a time, beating well after each addition. In a small bowl, combine the flour and baking powder and then slowly add this to the butter mixture.
  • 3. Spread 2/3 of the batter into the prepared pan. Spread the mincemeat on top of the batter. Drop the remaining batter by spoonfuls onto the mincemeat. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  • 4. Combine the powdered sugar and orange juice to make a glaze. Drizzle over the warm cake and serve.

3 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
4 teaspoons grated orange rind
1 1/2 teaspoons vanilla
1 cup granulated sugar
3 eggs
1 (750 ml) jar mincemeat
3/4 cup milk
1 cup chopped nuts
icing sugar, for dusting

Steps:

  • Stir the flour, baking powder, baking soda and salt together; set aside.
  • Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
  • Beat in the sugar.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the mincemeat.
  • Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
  • Stir in the nuts.
  • Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
