Steps:
- Preheat the oven to 350°F.
- In a medium skillet set over medium heat, add the bacon. Cook, stirring often, until most of the fat has rendered and the bacon is beginning to crisp. Add the onions and cook until soft and translucent, about 4 minutes. Add the garlic and cook for 1 minute, stirring. Remove the mixture to a paper towel-lined plate.
- Sprinkle the flour over the bacon drippings and whisk to combine. Cook for 1 minute, whisking constantly. Gradually whisk in the milk then add the sour cream and bacon mixture. Stir until the mixture has thickened to gravy consistency. Remove from heat and season with black pepper to taste.
- Bring a large pot of water to a boil and salt generously. Add the green beans and cook until tender but still crisp and green, about 5 minutes. Drain immediately then shock in a bowl of ice water to stop the cooking. Drain again and pat dry.
- In a large bowl combine the bacon mixture with the green beans, tossing to coat. Spread evenly among a greased 9 by 13-inch baking pan. At this point you can cover and refrigerate the unbaked, untopped casserole for up to 2 days. Top with shredded cheese and fried onions. Bake for 30 minutes, or until golden brown.

GREEN BEANS WITH CHEESE AND BACON
I found this among some recipes my husband's aunt sent me. I tried it once, and it became a family favorite immediately. I save it and use it in the summer when beans are freshest. Then we always have something to look forward to each summer. I often double this recipe just to have enough for my children to have leftovers! You can prepare this ahead of time, but make sure that the casserole is at room temperature before baking. I often use a mixture of both green beans and wax beans in the casserole.

Tips:
- To achieve the perfect balance of flavors, use high-quality ingredients. Fresh green beans, crispy bacon, sharp cheddar cheese, and a creamy sauce are essential for a delicious casserole.
- Don't overcook the green beans. They should be tender but still have a slight crunch. Overcooked beans will become mushy and lose their flavor.
- Use a good quality cheese that melts well. Cheddar, Gruyère, and Swiss are all excellent choices.
- Don't be afraid to experiment with different seasonings. Garlic powder, onion powder, and paprika are all great additions to this casserole.
- Serve the casserole immediately after baking. It's best enjoyed hot and bubbly.
