  • In a bowl whisk together the yogurt, the garlic paste, the lemon juice, the parsley, the mint, and salt and pepper to taste.
  • On an oiled grill set about 6 inches over glowing coals or in an oiled ridged grill pan set over moderately high eat grill the chicken (discard the marinade) turning it, for 12 to 15 minutes on each side, or until it is cooked through. While the chicken is cooking, in a skillet cook the onion in the oil over moderate heat, stirring, until it is softened and lightly golden. Remove the skillet from the heat, add the tomato and the sesame seeds, and season the mixture with salt and pepper. Transfer the chicken to a cutting board and cut it diagonally into thin slices. Cut off a small piece of each pita loaf to form an opening and heat the pita loaves on the grill, turning them once, for several seconds, or until they are just softened. Divide the chicken, the onion mixture, and the sauce among the pita loaves.

1/2 teaspoon cumin

1 1/4 pounds thin-cut skinless, boneless chicken breasts
Freshly ground pepper
Juice of 1 lemon
1/4 cup fat-free plain Greek yogurt
3 tablespoons almonds, roughly chopped

Steps:

  • Melt 1 tablespoon butter in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until just softened, 3 minutes. Add the rice; cook, stirring, until slightly toasted, 2 minutes. Add 2 cups water, the apricots, cumin, cinnamon and 1/4 teaspoon salt. Increase the heat to medium high; bring to a simmer. This is a simple and very delicious recipe, easy to make and so yummy. We got this recipe from the McCormick foods sample pack of Middle Eastern Spices (Harissa).

400 g chicken fillets
300 g pumpkin or 300 g butternut squash, peeled and diced
10 g harissa (McCormick's Middle Eastern Spices)
2 tablespoons olive oil
1/2 cup chopped coriander
1 lemon, juice of
1 lemon, zest of
100 g goat milk feta
2 cups cooked couscous

Steps:

  • Preheat oven to 200 degrees celcius.
  • Combine chicken, pumpkin, spice and oil and place on a baking tray.
  • Bake for around 20-25 minutes.
  • Cool slightly and slice the chicken into strips.
  • In a large serving bowl combine the coriander, lemon juice and rind, feta cheese, and couscous; mix well.
  • Finally fold through the pumpkin and the chicken pieces.
  • Serve garnished with lemon slices and coriander.

Maftoul is basically very large couscous. You can use Lebanese couscous, Israeli couscous, Berkukis etc for this beautiful dish. Easy to make!

5 cups chickpeas (tinned)
5 cups maftoul couscous
8 pieces chicken, of your choice (or a whole chicken portioned)
4 onions, sliced into semi circles
1 cup chopped tomato (fresh or tinned)
1 teaspoon allspice
1/4 teaspoon sumac
1/2 teaspoon ground fenugreek
1/2 teaspoon ground cumin
1/4 teaspoon coriander powder
1/4 teaspoon cinnamon
salt and pepper
olive oil
2 pints water

Steps:

  • Fry the spices and onion in a little olive oil. Add the chicken and seal well.
  • Bring 1/2 liter of water to the boil. Place maftoul in large bowl and pour over enough to cover the maftoul. After 10 seconds, drain off water and mix in 1/2 tsp salt before placing maftoul in the steamer.
  • Pour tomatoes over chicken and add salt & pepper to taste. Cover with water (water should come about 2" over the ingredients). At this point you can add a chicken stock cube if you wish. Cover and cook for 45 mins on medium heat.
  • If you have a large couscousier or double steamer you can cook the sauce in the bottom and maftoul in the top which is preferable as the maftoul absorbs the flavours --.
  • Remove the chicken from the sauce and place on a baking sheet in the oven (180 degrees c) for 10 minutes to brown off and dry out.
  • Whilst chicken is in the oven, add the chickpeas to the sauce and cook gently for 10 minutes.
  • Check seasoning. Take 8 bowls, divide the maftoul between them. Pour over some sauce then top with the chicken pieces.

I've lived in the Middle East for almost a decade and a half, and this recipe was the one we always used when we went camping out in the sand dunes. We'd do the marinade at home, throw everything in ziploc bags into the cooler, then hit the road, and by the time we got there and had the BBQ going, these wings were ready to plop on the fire. We'd eat them in batches as they came off the grill -- so yummy. Easy to do at home on a hibatchi or grill. Amounts are approxmiate as I used to just eyeball things, so don't freak out if you go a little more or less with some ingredients.

2 kg chicken wings, cut at the joint
1 1/2 tablespoons tomato paste
1 small red onion
1 big red onion
4 garlic cloves, ground in mortar and pestle
2 teaspoons mixed Arabic spices (called "baharat" here ( it's a combo of many different spices such as chili powder, cumin, cloves)
1/4 teaspoon fresh black pepper
1 teaspoon plain yogurt
1 1/2 tablespoons white vinegar
1 cup fresh lemon juice
1/4 cup olive oil
chopped fresh coriander (cilantro)

Steps:

  • Mix all the ingredients together in a bowl or large ziploc bag.
  • Throw the wings inches.
  • Cover or seal in a ziploc bag and let marinate for 2 hours to overnight.
  • Cook on a BBQ/hibatchi/grill until done.
  • Serve hot.

1 lb chicken breast (boneless,skinless, cut into 6-7 large pieces)
1 large onion, chopped
2 garlic cloves, minced
2 teaspoons olive oil
1 3/4 cups low-fat chicken broth
1 green bell pepper, seeded and diced (I prefer red)
2 cups fresh tomatoes, chopped
1 (15 ounce) can garbanzo beans, well drained
1/2 cup raisins
1 large bay leaf
1 1/2 teaspoons dried thyme leaves
1 teaspoon ground cumin
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1/8 teaspoon black pepper
1 cup couscous (uncooked)
salt, to taste
chopped parsley (to garnish)

Steps:

  • Coat Dutch oven or large, heavy pot with cooking spray. Cook chicken pieces over medium heat, turning frequently, until they begin to brown, With a slotted spoon, remove the chicken to medium bowl and set aside.
  • To same pot, add onion, garlic, oil, and 2 tablespoons broth. Stir up any browned bits from bottom of pot. Cook over medium heat, stirring frequently, 5-6 minutes or until onion is tender. If liquid begins to evaporate, add more broth.
  • Return the chicken to the pot. Add remaining broth, green pepper, tomato, garbanzos, raisins, bay leaf, thyme, cumin, allspice, cloves and black pepper. Bring to a boil, reduce heat, and simmer, covered, 20-25 minutes or until chicken is tender. Remove bay leaf and discard.
  • Add couscous and stir to mix well. Boil 2 minutes, covered. Remove pot from heat; stir up any couscous sticking to bottom. Allow mixture to stand 10-15 minutes, covered. Add salt to taste, if desired.
  • Arrange couscous on serving platter and top with chicken and sauce. Garnish with parsley.

1/4 cup olive oil
1 1/2 lbs boneless skinless chicken thighs (chopped into bite-sized pieces)
1 onion, thinly sliced
3 garlic cloves, minced
1 cup shredded carrot
1 fresh bay leaf (I used dried)
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon coriander
1 pinch ground cinnamon
salt & freshly ground black pepper
3/4 cup chopped dried fruits (I used dates and apricots)
1 lemon, juice and zest of
3/4 cup pitted mixed olive, chopped
4 cups chicken stock, divided
2 tablespoons butter
3 tablespoons pine nuts
1/4 cup sliced almonds
1 1/2 cups couscous
chopped fresh parsley

Steps:

  • Heat oil over medium-high heat and add chicken. Brown 3-4 minutes on each side. Drain leaving a small amount of oil in pan.
  • Add onions, garlic, carrots, bay leaf and season with spices, salt and pepper to pan. Cook 5-6 minutes.
  • Stir in fruits, add lemon zest, olives and 2 1/2 c stock.
  • Reduce heat to low and simmer 10 minutes. Sprinkle with lemon juice and turn off heat. Remove bay leaf.
  • While chicken simmers, melt butter in sauce pan over medium heat.
  • Add nuts and lightly toast for a few minutes.
  • Add 1 1/2 c stock and bring up to a boil then stir in couscous. Stir and cover. Let stand 5 minute.
  • Serve chicken over couscous and garnish with parsley.
  • This rocks!

1 Tbsp. extra virgin olive oil
1 bunch scallions, thinly sliced
1 tsp. ground cinnamon
1 tsp kosher salt
fresh pepper to taste
2 cloves garlic, minced
2 medium tomatoes, diced
1/4 cup golden raisins
1 # lean ground chicken
1/4 cup plain low fat yogurt
1/3 cup pine nuts, toasted
4 4inch whole wheat pitas
serve with sliced cucumbers/tomatoes

Steps:

  • Heat olive oil in a medium skillet over medium heat, add scallion white parts, cinnamon, salt and pepper and cook until tender, about 5 minutes. Stirin garlic, tomato, and raisins and cook over high heat until mixture is almost dry, about 6 minutes. Add the chicken and cook stirring until meat is cooked through, about 5-6 minutes. Remove from the heat and stir in the green part of the scallions, yogurt, and pone nuts. Serve mixuture stuffed into pita with tomato and cucumber slices.
