4 cups Old Fashioned rolled oats
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon

Steps:

  • Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

3/4 cup brown sugar
2/3 cup margarine, softened
1/2 cup white syrup
1 egg
3/4 cup chunky peanut butter
6 ounces chocolate chips

Steps:

  • Mix first five ingredients and put in a 9x13 inch glass pan.
  • Microwave 3 1/2- 4 minutes on high, turning every minute or bake for 15 minutes at 350F in the oven.

Steps:

  • In medium bowl, combine oats, sugar, butter, and honey. Microwave on high for 4 1/2 - 5 1/2 minutes or until bubbly, stirring twice.

I've had this recipe for many years. We got our first microwave in 1983 and this recipe was in the book that came with it. (Sharp Carousel microwave cookbook) It's quick, easy and delicious. The recipe says it makes 32 small bars, but it's hard to cut them that small.

3/4 cup butter or 3/4 cup margarine
1 cup brown sugar
1 3/4 cups unsifted flour
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups quick-cooking rolled oats
3/4 cup raspberry jam (I don't like raspberry jam, so I've used blackberry, strawberry, etc)

Steps:

  • 1. Lightly grease an 8-inch, heat-resistant, non-metallic baking dish.
  • 2. In a medium-sized bowl, cream butter and sugar together until fluffy. Stir in flour, salt, baking soda and oats. Combine until well blended.
  • 3. Press one-half of mixture into bottom of prepared baking dish.
  • 4. Heat, uncovered, on FULL POWER 5 minutes.
  • 5. Spread jam evenly over baked oat mixture.
