These caramels were "homework" for a candy-making class that I took some time ago...and I've repeated that assignment over and over since! I usually make an extra batch and freeze it for company or last-minute gift-giving. After only about 20 quick seconds in the microwave, the frozen caramel is soft enough to cut, wrap and pack into a candy jar.

1 cup unsalted butter
2-1/3 cups (1 pound) brown sugar, firmly packed
1 cup light corn syrup
1 can (14 ounces) sweetened condensed milk
1/8 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts, optional

Steps:

  • In 2-qt. microwave-safe pitcher, combine the butter, sugar, syrup, milk and salt. Microwave on high for 2-3 minutes, stirring once after every minute. When butter is melted, stir well. Attach microwave candy thermometer. Microwave on high for about 8 minutes or until mixture reaches 245° (firm-ball stage). No stirring is needed. Remove from microwave; stir in vanilla and walnuts. Let stand for 10 minutes, stirring well several times. Pour into buttered 13x9-in. pan (smaller 11x7-in. pan yields thicker candy as shown in photo). Refrigerate until cool. Invert pan. Carefully tap out whole block of candy; cut in squares. Wrap in waxed paper and store in refrigerator. (Can also freeze.)

This recipe is very quick to make and has quickly become a Christmas tradition at our house. Everybody loves them! Wrapping the carmels in wax paper is the longest part of the process, but if you have several people help it can be done in less than half an hour. Enjoy!

1 cup butter (no substitutes)
1 cup brown sugar
1 cup granulated sugar
1 cup light Karo syrup
1 (12 ounce) can sweetened condensed milk

Steps:

  • Melt butter in a large glass bowl. (Make sure it is microwave safe or it will burn the carmel.).
  • Remove bowl from microwave and add remaining ingredients. Stir well. Cook 7 minutes on high. Stir very well.
  • Cook another 7 minues and stir well. Pour into well buttered 9x 13 pan.
  • When cool, cut and wrap in waxed paper.

1/3 c butter
1/2 c light corn syrup (karo is the best brand)
1/2 c granulated sugar
1/2 c light brown sugar, packed
1/2 c sweetened condensed milk -not evaporated
1/4 tsp vanilla extract

Steps:

  • 1. Line a 8x8-inch dish with foil and butter or spray it real well.
  • 2. Put all ingredients in a microwave safe bowl. Mix just to combine. Microwave for 6 minutes. Stirring after every minute. Pour into the prepared dish. Smooth and Cool at room temperature.Then cut to size you like. Wrap in waxed paper. You can use a larger dish if you wish the caramels to to be not too thick.

Tips:

  • Make sure your kitchen is well-ventilated, as the caramel will release strong fumes.
  • Use a deep dish to prevent the caramel from splattering.
  • Cover the dish with plastic wrap to prevent the caramel from drying out.
