1 cup brown sugar, packed
1/4 cup baking cocoa
1 1/2 cups hot water
1/4 cup butter or 1/4 cup margarine
1 cup flour
1 cup sugar
1/4 cup cocoa
1 cup milk
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Combine first 4 ingredients in a glass bowl or 4 cup glass measuring cup.
  • Microwave for 4 minutes or until bubbling.
  • Combine cake ingredients in a 8 or 9 inch glass cake pan. Stir until smooth.
  • Pour liquid topping mixture over cake. Microwave for 9-12 minutes until cake rises to top.

1 (21 ounce) can apple pie filling
½ cup applesauce

Steps:

  • Mix the box of cake mix, eggs, pie filling and applesauce till moist. Use a microwave safe bundt pan or substitute a microwave safe bowl that has a microwave safe cup or cone placed in the middle of it (to mimic a bundt pan). Pour mixture into the bowl around the cup.
  • Bake on high for 6 minutes 30 seconds, turn and bake for another 6 minutes 30 seconds on high. Remove from oven and cover bowl with a dish and let stand for 5 minutes (this finishes the cooking process).
  • Turn cake over onto dish and remove cone (cup) for a delicious quick dessert. Good hot with vanilla ice cream or whipped topping.

You don't need Tupperware's bundt pan to make this, but it must be micro safe and it must be a ring mold shape or the middle won't cook properly. It was really tasty and makes a nice snack cake, even if it isn't the prettiest looking cake I've ever made. The cherry pie filling makes it rather moist - and no, there is no butter or oil in this recipe.

1 can cherry pie filling
3 large eggs, beaten lightly

Steps:

  • You will need a large plastic, microwave safe bundt pan or ring mold for this recipe.
  • Do not follow directions on cake mix box- just dump the dry mix into a bowl and add the cherry pie filling and the eggs.
  • Mix well.
  • Pour into the plastic bundt pan (I spray mine with nonstick baking spray first) and place in your microwave on HIGH for approximately 12 minutes- or until a toothpick comes out clean; NOTE: Older microwaves and those without a spinning base will probably require a bit longer cook time, and you will also need to rotate the pan 1/4 turn every 4 minutes or so for more even baking).
  • Let cool upside down on a wire rack.

4 eggs
2 teaspoons vanilla extract

¼ cup coarsely chopped walnuts
¼ teaspoon salt
½ cup miniature marshmallows
½ cup butter
⅓ cup milk
¼ cup unsweetened cocoa powder
½ teaspoon vanilla extract
4 cups confectioners' sugar

Steps:

  • Put 1 cup butter or margarine into large mixing bowl. Microwave on high 1 to 1 1/2 minutes until melted.
  • Stir in 2 cups white sugar and cocoa. Add eggs and vanilla; beat vigorously until well-blended. Stir in flour, nuts and salt. Let batter "rest" for 10 minutes.
  • Pour into an 11 3/4 x 7 1/2 pan. Place on a plastic trivet or inverted saucer in oven. Microwave on medium 9 minutes, rotating dish 1/2 turn after 3 minutes.
  • Microwave on high 3-5 minutes rotating dish 1/2 turn once, until top is mostly dry with moist spots and pick comes out clean. Sprinkle marshmallows evenly over top of cake. Let stand about 5 minutes until marshmallows are slightly melted.
  • To Make Frosting: Melt 1/2 cup butter in large bowl. Stir in 1/3 cup milk, 1/4 cup cocoa and 1/2 teaspoon vanilla. Add 4 cups confectioners' sugar and beat vigorously until smooth. Spread evenly over marshmallows. Let stand on flat surface 30 minutes until slightly warm or cool completely. Makes 16 very rich servings as this is a very dense cake.

If you don't have masa harina flour on hand, you can add an additional 1/4 cup of yellow cornmeal, but the masa harina flour adds the authentic taste to this dish. For a less sweet dish, reduce granulated sugar to 1/3 cup. For a firmer sweet corn cake, microwave an additional 3-minutes.

I actually make about 6 servings of the dry ingredients ahead of time, then add the liquid later. The dry is about 11 tablespoons. A whipping cream or ice cream topping completes this heavenly dessert. Can substitute peanut butter for hazelnut spread, but cut the portion to 1 1/2 tablespoon. You can increase cocoa powder and hazelnut spread to 3 tablespoons each and substitute almond extract for vanilla if desired.

Created this in a dorm room when all the mug cake recipes I found were terrible. It's super easy to make and to memorize, and if you only use one mug, a tablespoon measure, and a spoon, you have a lot fewer dishes to do. Easy to make in under 5 minutes with minimal mess, so enjoy! And never feel bad about eating the entire thing yourself.

3 tablespoons chocolate chips, or to taste
2 tablespoons butter
2 tablespoons packed brown sugar
1 tablespoon white sugar
salt
1 pinch baking soda
1 splash vanilla extract
1 egg yolk
¼ cup all-purpose flour

Steps:

  • Microwave chocolate chips and butter in a microwave-safe mug until melted, about 20 seconds. Add brown sugar, white sugar, salt, baking soda, and vanilla extract; mix together until combined. Stir in egg yolk. Add flour; mix until batter is blended and smooth.
  • Cook in the microwave until crust forms but center is still fudgy, about 35 seconds. Add 5 to 10 seconds for a drier consistency.

This is a delicious treat for two ready in 20 minutes, using white cake mix, strawberry-flavored gelatin and homemade strawberry cream syrup.

6 tablespoons Betty Crocker™ Super Moist™ white cake mix
1 egg
2 tablespoons milk
1 tablespoon vegetable oil
1 tablespoon Jell-O™ strawberry-flavored gelatin
1 tablespoon hot water
1/4 cup milk
2 tablespoons sweetened condensed milk (not evaporated)
1 tablespoon strawberry-flavored gelatin
1/2 cup whipped topping
2 tablespoons chocolate-flavored syrup
2 fresh strawberries
4 chocolate sticks

Steps:

  • Lightly grease 2 (14- to 16-oz) mugs with vegetable oil using paper towel.
  • In medium bowl, place cake mix. With whisk, beat in egg, 2 tablespoons milk and 1 tablespoon oil. In small cup, dissolve 1 tablespoon gelatin in hot water. Beat into cake batter. Divide batter evenly between mugs, about 1/2 cup in each mug.
  • Microwave mugs on High 30 seconds. Let stand 5 seconds. Microwave on High 30 seconds longer. Let stand 5 seconds. Cake is done when toothpick inserted in center comes out clean.
  • Using bamboo skewer or sharp knife, gently poke several holes in each mug cake.
  • To make Strawberry Cream Syrup, in small microwavable bowl, beat both milks with whisk to blend. Microwave on High 30 seconds or until hot. Beat in 1 tablespoon gelatin. Pour half of the cream syrup over each cake. Let cake stand 2 minutes or until cream syrup is absorbed.
  • Top each cake with 1/4 cup whipped topping; drizzle each with 1 tablespoon chocolate syrup. Garnish each cake with 1 strawberry and 2 chocolate sticks. Serve immediately. Store in refrigerator.

1 tablespoon unsalted butter (at room temperature)
1 1/4 tablespoons sugar
