Categories     main-dish

Time 50m

Yield 2 servings

Number Of Ingredients 12

Olive oil
4 bone-in skin-on chicken thighs
Kosher salt and freshly ground black pepper
1/4 pound spicy bulk Italian sausage
1 small yellow onion, halved and sliced
2 red bell peppers, halved, seeded and sliced
2 cloves garlic, sliced
One 15-ounce can San Marzano crushed tomatoes
1/2 cup chicken stock
1 tablespoon picked oregano leaves
1 tablespoon sherry vinegar
2 tablespoons finely chopped flat-leaf parsley

Steps:

  • Place a large Dutch oven over medium-high heat and add a film of olive oil. Sprinkle the chicken on both sides with salt and pepper and then add to the pan skin-side down. Cook without moving too much until golden brown and crisp, 5 to 6 minutes. Flip and brown on the other side for 1 to 2 minutes. Remove to a plate and set aside.
  • Drain half of the fat from the pan and then place it back over the heat. Add the sausage to the pan, breaking it up as you add it. Brown for 1 to 2 minutes while continuing to break it up with the back of a spoon. Stir in the onions, peppers and garlic with a pinch of salt and cook until the onions begin to soften, about 3 minutes. Season with salt and pepper and then add the tomatoes, chicken stock and oregano, scraping the bottom of the pan for brown bits.
  • Nestle the chicken back in, cover and cook until the chicken is cooked through and the sauce has thickened, 20 to 30 minutes.
  • Stir in the vinegar and parsley and serve.

BAKED CHICKEN, POTATOES, AND FENNEL

Baked Chicken, Potatoes, and Fennel image

Fresh fennel (often mistakenly called anise) is a common ingredient in Mediterranean cooking. Here, it is baked until tender and buttery-tasting. If you are unable to find fennel bulbs with the fronds still attached, you can garnish the dish with dill instead.

Time 1h20m

Number Of Ingredients 7

6 small white potatoes, 1 1/2 pounds, halved and sliced into 1/2-inch-thick half-moons

Coarse salt and ground pepper
1 whole chicken, cut into 10 pieces (about 2 1/2 pounds)
1 can (14 1/2 ounces) reduced-sodium chicken broth

  • Meanwhile, in a large nonstick skillet over medium-high heat, warm remaining teaspoon oil. Season chicken with salt and pepper; cook, starting with skin side down, until browned on both sides, 6 to 10 minutes. Remove chicken.

MICHAEL SYMON'S SMASHED AND FRIED POTATOES RECIPE - (4.3/5)

Michael Symon's Smashed and Fried Potatoes Recipe - (4.3/5) image

Provided by Venzie

Number Of Ingredients 8

2 pounds Sweet and/or Yukon Gold Potatoes
small bundle Thyme
4 sprigs Rosemary
4 cloves Garlic (smashed)
Salt
1/4 cup Chicken Fat
freshly Ground Pepper
Parmesan (to garnish)

Steps:

  • In a large dutch oven, place the potatoes with enough water to cover them by a few inches. Add the thyme, rosemary, and garlic. Salt the water, then bring to a boil. Gently boil until the potatoes are cooked through and tender, about 30 minutes, then drain remaining water. Place the same pan back on medium high heat with the potatoes in it. Let the potatoes dry out for a minute, letting any water evaporate. Add the chicken fat to the pan and once it has melted, begin to slightly flatten the potatoes with the bottom of a smaller pot or ramekin. Make sure to keep the potatoes in an even layer. Brown for about 5 minutes, then flip. Season with salt and pepper and cook until the potatoes are golden brown. Serve with grated parmesan to garnish.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and prevent any scrambling during the cooking process.
  • Sear the Chicken: Searing the chicken before braising it helps to develop a flavorful crust and lock in the juices. Make sure the chicken is browned on all sides before adding it to the braising liquid.
  • Use a Variety of Vegetables: This recipe calls for fennel and potatoes, but you can also add other vegetables such as carrots, celery, onions, or mushrooms. This will add flavor and texture to the dish.
  • Deglaze the Pan: After searing the chicken, deglaze the pan with white wine or chicken broth. This will help to loosen any browned bits and add flavor to the braising liquid.
  • Simmer Gently: Braising is a low and slow cooking method, so make sure to simmer the chicken gently. This will help the chicken to cook evenly and prevent it from becoming tough.
  • Season to Taste: Once the chicken is cooked, taste the braising liquid and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.

Conclusion:

Michael Symon's Braised Chicken with Fennel and Potatoes is a flavorful and comforting dish that is perfect for a weeknight meal. The chicken is tender and juicy, the fennel and potatoes are soft and flavorful, and the braising liquid is rich and flavorful. This dish is sure to please everyone at the table.
