1 can(s) white hominy, drained
2 Tbsp butter, cold
4 eggs
1 c leek or white onion {chopped}
2 clove garlic {crushed}
1/4 tsp achiote {ground}
1/4 c milk, 2%
2 tsp cilanto {finely chopped}
salt and pepper {to taste}
SERVE WITH COFFEE AND MEXICIAN CORN BREAD

  • 1. Preparation: 1.Heat the butter over medium heat in a large sauté pan, add the chopped leek or onions, crushed garlic, achiote and salt to make a refrito, cook until the leeks are soft, about 5 minutes.

6 large eggs
1/2 cup diced green pepper
6 slices bacon
1/2 cup grated cheddar cheese
