2 tablespoons canola oil
3 cloves garlic, minced
1/2 to 1 whole large onion, chopped
4 cups long grain rice
Two 14.5-ounce cans whole tomatoes
One 10-ounce can diced tomatoes and green chiles, such as Rotel
1 teaspoon cumin (or more to taste)
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
6 to 8 cups low-sodium chicken broth (more if needed)
1 1/2 cups grated Cheddar
Fresh cilantro, chopped, for serving

Steps:

  • Preheat the oven to 375 degrees F.

Finally, add the chicken broth and stir the mixture together. Bring the mixture to a boil, and then reduce heat to low. Cover, and simmer until the rice is not quite done, 10 to 15 minutes.
  • Top with the cheese, and then bake with the lid off until the cheese is melted and the rice fully cooked, about 15 minutes. Serve with chopped cilantro.

YELLOW RICE CASSEROLE

Here's another one I don't know where I got and haven't tried. Yellow rice is oldest DS's favorite food, so I have been meaning to make this for awhile. I don't know about the water chestnuts, DH is not a fan. If you get to this before me, let me know how it is! I don't know about the size of the mexicorn (this is a guess), but I think that it only comes in one size.

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 10

5 ounces yellow rice
1 (10 ounce) can mexicorn, drained
1 onion, chopped
2 ounces diced pimentos, drained
8 ounces tiny English peas, drained
11 ounces cream of chicken soup
8 ounces sour cream
1/4 cup butter, melted
8 ounces water chestnuts, sliced and drained
1 cup grated sharp cheddar cheese

Steps:

  • Top with cheese and bake 5 additional minutes, until melted.

Tips:

  • Use high-quality ingredients for the best flavor. Look for fresh vegetables, flavorful rice, and a good quality salsa.
  • If you don't have a casserole dish, you can use a large skillet or baking sheet. Just make sure that the dish is large enough to hold all of the ingredients.
  • If you like your rice casserole with a little more spice, you can add a diced jalapeƱo pepper or a teaspoon of chili powder to the recipe.
  • If you're short on time, you can use pre-cooked rice. Just be sure to heat it through before adding it to the casserole.
  • Serve the casserole with your favorite toppings, such as sour cream, guacamole, or salsa.

Conclusion:

Mexican yellow rice casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover rice. With a few simple ingredients, you can create a flavorful and satisfying casserole that the whole family will enjoy.
