1/2 teaspoon salt
1/4 teaspoon diced minced onion
1/4 teaspoon paprika
1 1/2 teaspoons chili powder (Spanish is best)
2 tablespoons water
8 flour tortillas (6-inchinch")
cooking spray
1 (16 ounce) can low fat refried beans
1/3 cup diced tomato
2/3 cup mild picante sauce
1 cup shredded low-fat cheddar cheese
1 cup shredded low-fat monterey jack cheese
1/4 cup chopped green onion
1/4 cup sliced black olives

Steps:

  • Cook the ground beef over medium heat until brown, then drain.
  • Return meat to pan and add the salt, onions, paprika, chili powder and water.
  • Let mixture simmer over medium heat for 10 minutes, stirring often.
  • Pre-heat oven to 400.

1 prebaked 12-inch pizza crust
1 can (16 ounces) refried beans
2 cups shredded cheddar cheese
3 cups shredded lettuce
1 cup shredded Mexican cheese blend
1/3 cup chopped seeded tomato
2 tablespoons sliced ripe olives
1/2 cup coarsely crushed ranch-flavored tortilla chips

Steps:

  • Slice half of the onion and chop the rest; set aside. Place crust on an ungreased 12-in. pizza pan. Spread beans over crust to within 1/2 in. of edges. 2 ready-made whole wheat pizza crusts
1 large can rosarita vegetarian refried beans
1 Tbsp taco seasoning mix
2 Tbsp water
chopped lettuce
chopped tomatoes
sliced black olives
minced green onions
sour cream, ranch dressing or salsa
cheddar and jack cheese (if not desiring vegan)

Steps:

  • 1. Bake pre-made pizza crusts in oven for 10 minutes. (I have recently found a thin whole wheat crust that I like---it does not have to be prebaked.)
  • 2. Meanwhile, in a large saucepan, mix your refried beans with taco seasoning and water and simmer til water is evaporated. If you want to get more veggies in, brown up some diced onions and peppers before adding the beans. I also like to stir in some chopped mild chilies.
  • 3. Remove crusts from oven and spread bean mixture on top of the two crusts. Top with mozzarella cheese.
  • 4. Return to oven and bake til sizzling.
  • 5. Top with diced tomatoes, shredded lettuce, black olives, green onions and a sprinkling of cheddar or jack cheese. Dress with sour cream, ranch dressing or salsa.

2 green onions, sliced
