Categories     < 60 Mins

Time 45m

Yield 6 serving(s)

Number Of Ingredients 8

1 1/2 lbs ground beef, cooked and drained
1/4 cup of chopped onion
1 (8 ounce) can tomato sauce
1 (15 ounce) can whole kernel corn, drained
1/2 cup water
3 tablespoons taco seasoning (1 package)
1 (8 ounce) package cornbread mix
1/3 cup shredded sharp cheddar cheese or 1/3 cup shredded Mexican blend cheese

Steps:

  • After cooking and draining the ground beef, add the onions, tomato sauce, corn, water, and taco seasoning.
  • Spoon into a greased 2 1/2 quart baking dish.
  • Prepare the corn bread according to the package directions. Pour over the beef mixture.
  • Bake uncovered at 400 degrees for 20 minutes or until the cornbread is done.
  • Top with cheese and bake 5 more minutes to melt the cheese.
  • Enjoy!

Tips:

  • For the best cornbread flavor, use fresh cornmeal. If you don't have fresh cornmeal, you can use store-bought cornmeal, but be sure to check the expiration date.
  • To make the cornbread extra moist, add a little bit of sour cream or buttermilk to the batter.
  • Be sure to grease the baking dish before adding the cornbread batter. This will help prevent the cornbread from sticking to the dish.
  • Bake the cornbread until a toothpick inserted into the center comes out clean. This will usually take about 30 minutes.
  • Let the cornbread cool for a few minutes before serving. This will help it hold its shape.

Conclusion:

Mexican taco cornbread bake is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover taco meat, and it is also a great dish to serve at parties or potlucks. The cornbread is moist and flavorful, and the taco filling is savory and satisfying.
