Time 4h5m

Yield 1 batch

Number Of Ingredients 5

1 cup sugar (more if you like)
3/4 cup cocoa (Hershey's Dark is good)
2 cups water for low-fat sorbet (or milk (skim, 1% or 2%, your choice)
2 ounces dark chocolate (can double if you like) or 2 ounces semisweet chocolate, chopped (can double if you like)
1 pinch cayenne (or more, entirely optional but is a nice surprise in a frozen dish)

Steps:

  • Combine the sugar and cocoa in a saucepan to get rid of lumps. Stir in 2 cups of water or milk and put it over medium-high heat. (Feel free to make part of this coffee if you like ( *whistles innocently*)
  • Bring to a simmer and cook for 2 minutes. Take off heat and stir in the chocolate. Stir until it's melted.
  • Let the mixture cool, and then refrigerate until cold.
  • Pour into ice cream maker and freeze according to manufacturer's directions. The one I used was so easy: pour in, turn on, wait for magic to happen.
  • Store in freezer for extra firmness.

Time 7h10m

Number Of Ingredients 6

1½ pounds bittersweet chocolate, (finely chopped)
¾ cup heavy cream
2 teaspoon vanilla extract
½ teaspoon cayenne pepper
1 teaspoon ground cinnamon
red sugar for decoration

Steps:

  • Remove 12 ounces of the chocolate and place it in a medium-sized mixing bowl. Set aside.
  • In a medium-sized saucepan, scald the cream with the vanilla. Tiny bubbles will appear on the edges of the pan, and it should be very hot, but not boiling.
  • Pour the hot cream over the 12-ounces of chocolate and let stand for 4 minutes. Use a spoon to stir to blend and set aside. This mixture is called ganache. Gently stir in the cayenne and cinnamon. Let it come to room temperature, cover with plastic wrap and chill in the refrigerator until it becomes completely firm, at least 6 hours.
  • Cover two baking sheets with parchment paper and, in a double boiler, melt the remaining 12-ounces of chocolate.
  • Remove the firm ganache from the refrigerator and use a 1-inch cookie scoop to scoop out about 5 dozen truffles, placing them on one of the parchment-covered baking sheets. Now place the shaped truffles in the refrigerator for at least 30 minutes.
  • Using a fork, carefully dip each truffle into the melted chocolate to coat it evenly and place them on the other parchment covered baking sheet. You can use a small knife to help you remove the covered truffle from the fork. The truffles will set at room temperature. If desired, sprinkle them with red sugar when they are about halfway set.
  • Once set, you can put the truffles in paper truffle cups.

ORANGE SPICED MEXICAN CHOCOLATE

Orange Spiced Mexican Chocolate image

I made this up on a cold evening when I felt like making something different from my usual Mexican chocolate. The orange adds a subtle flavor and fragrance. For the adults, you can add some Cointreau instead of the Recipe #118600 that I use, or you can skip it altogether.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the sorbet will be. Look for chocolate with a cocoa content of at least 70%.
  • Don't over-churn the sorbet. If you churn it for too long, it will become icy and grainy. Churn the sorbet until it is thick and creamy, but still soft enough to scoop.
  • Serve the sorbet immediately. Sorbet is best when it is fresh. If you need to store it, place it in an airtight container in the freezer for up to 2 weeks.
  • Garnish the sorbet with your favorite toppings. Some popular toppings include whipped cream, chocolate chips, nuts, and fruit.

Conclusion:

Mexican spiced chocolate sorbet is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. So next time you are looking for a sweet treat, give this sorbet a try.
