Time 1h

Yield 4

Number Of Ingredients 8

4 (8 ounce) skin-on, bone-in chicken thighs
1 teaspoon paprika
salt and pepper to taste
4 slices bacon, cut into 1/2 inch pieces
⅓ cup low-sodium chicken broth
4 ounces sliced mushrooms
¼ cup heavy whipping cream
2 green onions, white and green parts separated and sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Season chicken thighs on all sides with paprika, salt, and pepper.
  • Cook bacon in a cast iron skillet or oven-safe pan over medium-high heat until browned, 4 to 5 minutes. Remove from skillet and drain on a paper towel-lined plate. Drain and discard excess grease from skillet.
  • Return skillet to medium heat and cook chicken thighs, skin-side down, for 3 to 4 minutes. Flip chicken over and place skillet in the preheated oven.
  • Bake until chicken thighs are no longer pink at the bone and juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove chicken to a plate and cover with foil to keep warm. Remove all but 2 tablespoons drippings from skillet.
  • Return skillet to the stove over medium-high heat. Pour in chicken broth while whisking up brown bits from the bottom of the skillet. Add mushrooms and cook until soft, about 3 to 4 minutes. Pour in heavy whipping cream and whisk together until lightly simmering, then reduce heat to medium-low. Season with salt and pepper, if necessary.
  • Return chicken and any juices back into skillet; top with bacon and green onions. Serve immediately, spooning sauce over the chicken.

Time 55m

Number Of Ingredients 14

4-8 boneless skinless chicken thighs (depending on size)
1 can(s) 15 oz. diced tomatoes, no salt added
1/2 c water or chicken stock
2 tomitallos
1 pablano pepper
1 small sweet onion
1 jalapeno
1 tsp granulated garlic
2 tsp cumin
2 Tbsp chili powder
1 tsp paprika
1 Tbsp worchestshire sauce
1/2 tsp lemon juice
rice, opt

Steps:

  • 1. Cut pablano and jalapeno peppers, tomatillos and onion in half. Place on a baking sheet and place under a low broiler for about 7-10 just to char slightly.
  • 2. Place charred veggies in a food processor and pulse just a few times. You want chopped veggies, not pureed.
  • 3. Season chicken on both sides with your favorite seasonings, I like to use granulated garlic and onion powder and black pepper. Lightly brown on both sides in about 1 tablespoon of olive oil.
  • 4. Pour charred veggies over chicken.
  • 5. To you skillet add canned tomatoes, 1/2 c. of water or chicken stock, chili powder, cumin, paprika, granulated garlic, Worcestershire and lemon juice and mix well.
  • 6. Simmer uncovered for about 30 min.
  • 7. Serve over spanish rice, top with a Mexican crumbling cheese.
  • 8. NOTE: This can also be cooked in a slow cooker and the chicken shredded, add uncooked instant rice, or pre-cooked long grain rice to pot once chicken is done.

VERSATILE MEXICAN CHICKEN THIGHS

Versatile Mexican Chicken Thighs image

Chicken thighs are coated with a seasoning mix composed in part of typical Mexican flavors: cumin and oregano. They are then cooked on the stovetop for an easy, flavorful meal. The thighs may be eaten as a main dish accompanied by sides of tortillas, refried beans, tomato salsa and perhaps Mexican rice. Or consider them as fillings for warm corn tortillas. Either way, I think you'll like these -- both for their flavor and for their ease of preparation!

Tips:

  • For crispier chicken, pat the thighs dry with paper towels before searing.
  • Use a large skillet or Dutch oven to ensure that the chicken thighs have enough space to brown evenly.
  • Don't overcrowd the skillet or the chicken will steam instead of brown.
  • Season the chicken thighs generously with salt and pepper before searing.
  • Use a good quality salsa for the best flavor. If you can, make your own salsa using fresh tomatoes, onions, and cilantro.
  • Simmer the chicken thighs in the salsa for at least 30 minutes, or until the chicken is cooked through and the sauce has thickened.
  • Serve the chicken thighs with your favorite sides, such as rice, beans, or tortillas.

Conclusion:

Mexican smothered chicken thighs are a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is seared until golden brown and then simmered in a flavorful salsa until cooked through. The result is a tender and juicy chicken dish that is sure to please everyone at the table.
