Tips:

  • Choose fresh corn: Fresh corn on the cob is the best choice for this recipe. Look for ears with plump kernels and no blemishes.
  • Use a sharp knife: A sharp knife will make it easier to cut the corn off the cob.
  • Don't overcook the corn: Overcooked corn will be tough and chewy. Cook it just until it is tender-crisp, about 5-7 minutes.
  • Use a good quality cheese: A good quality cheese will melt smoothly and evenly. Avoid using pre-shredded cheese, as it often contains additives that can prevent it from melting properly.
  • Season the corn: Season the corn with salt, pepper, and other spices to taste. You can also add herbs, such as cilantro or basil, for extra flavor.

Conclusion:

Mexican scalloped corn is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up fresh corn on the cob, and it is also a good source of fiber and vitamins. Serve it with grilled chicken or fish, or as a side dish for tacos or enchiladas.
