Time 27m

Yield 8 serving(s)

Number Of Ingredients 9

3 lbs small red potatoes, quartered
1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped green onion
1 cup frozen corn, thawed
2/3 cup mayonnaise or 2/3 cup salad dressing
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 tablespoon cilantro

Steps:

  • Cook potatoes in boiling water 10-12 minutes or until fork-tender; drain; rinse with cold water; drain well.
  • In a large mixing bowl, mix mayonnaise (or salad dressing) and seasonings. Add potatoes, celery, pepper, onion, and corn. Gently mix all together to coat. Chill.

Tips:

  • Choose the right potatoes: For this recipe, small, waxy potatoes like red potatoes or fingerling potatoes work best. These hold their shape well and won't get too mushy when roasted.
  • Roast the potatoes until they're crispy: The key to great roasted potatoes is to roast them until they're crispy on the outside and tender on the inside. This will take about 20-25 minutes at 400°F.
  • Use a flavorful marinade: The marinade for this recipe is made with olive oil, lime juice, chili powder, cumin, and garlic. This combination of flavors gives the potatoes a delicious Southwest-inspired taste.
  • Don't overcrowd the pan: When roasting the potatoes, don't overcrowd the pan. This will prevent them from cooking evenly. Instead, spread the potatoes out in a single layer on the baking sheet.
  • Serve the potato salad warm or cold: This potato salad can be served warm or cold. If you're serving it warm, let it cool for a few minutes before adding the dressing. If you're serving it cold, chill it for at least an hour before serving.

Conclusion:

This Mexican roasted potato salad is a delicious and easy-to-make dish that's perfect for any occasion. The crispy potatoes, flavorful marinade, and creamy dressing come together to create a dish that's sure to please everyone at your table.
