Time 50m

Yield 4 servings

Number Of Ingredients 9

1 tablespoon vegetable oil
1 cup long grain white rice
1/3 cup finely chopped white onion
1 clove garlic, minced
2 1/4 cups chicken broth
3 tablespoons tomato paste
1 1/4 teaspoon kosher salt
1 serrano chile
1 fresh cilantro sprig

Steps:

  • In a large heavy saucepan, heat the vegetable oil on medium-high heat. Add the rice, onions and garlic. Saute until the rice has an opaque color and is fragrant, about 2 minutes. Add the chicken broth, tomato paste and salt. Mix well to incorporate evenly. Then add in the chile and cilantro sprig. Cover, reduce the heat to low, and simmer until rice is ready, about 30 minutes. Fluff with a fork and serve immediately.

Tips:

  • Use high-quality ingredients. This will make a big difference in the flavor of your rice.
  • Rinse the rice before cooking. This will remove any dirt or debris and help the rice cook evenly.
  • Use the right amount of water. Too much water will make the rice mushy, while too little water will make it dry and hard.
  • Cook the rice over medium heat. This will help prevent the rice from sticking to the pot and burning.
  • Fluff the rice with a fork before serving. This will help separate the grains of rice and make it lighter and fluffier.

Conclusion:

This Mexican red rice is a delicious and easy-to-make dish that is perfect for any occasion. It is packed with flavor and can be served as a main course or a side dish. So next time you are looking for a new and exciting way to cook rice, give this recipe a try!
