1 1/2 lbs ground chuck
1 large onion, chopped
1 green pepper, chopped
2 fresh tomatoes, chopped (canned ok)
1 can Rotel Tomatoes
salt & pepper
12 corn tortillas
1 (16 ounce) can ranch style beans
1 lb Velveeta cheese, thinly sliced
1 can cream of chicken soup

Steps:

  • Brown meat with onion and pepper.
  • Add tomatoes, salt and pepper.
  • Arrange in a 9x13 dish, one layer of tortillas, meat, beans, and cheese.
  • Repeat layers.
  • Top with soup.

2 cups beef broth
1 cup uncooked long grain rice
1 tablespoon butter
1 teaspoon salt
2 large eggs, beaten
2 tablespoons diced pimientos, drained
FILLING:
1 pound ground beef
1 garlic clove, minced
1 teaspoon ground cumin
1/2 cup taco sauce
1 large egg, beaten
TOPPINGS:
1 large avocado
1 tablespoon chopped onion
1 tablespoon taco sauce
1/2 teaspoon lemon juice
1 cup sour cream

Steps:

  • In a large saucepan, combine beef broth, rice, butter and salt. Cover and cook rice according to package directions. Remove from heat; cool slightly. Stir in eggs and pimientos. , Press onto the bottom and up the sides of a greased 10-in. pie plate; set aside. For filling, cook beef until no longer pink; drain. Stir in garlic and cumin; cook for 2 minutes. Remove from heat; stir in taco sauce and egg. Spoon filling into crust. 1 tablespoon all-purpose flour
1 onion, chopped
1 pound bulk pork sausage
1 pound ground beef
1 teaspoon Cajun seasoning
1 pinch garlic powder
1 (15 ounce) package store-bought refrigerated pie dough, at room temperature
1 quart vegetable oil for deep frying

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-low heat; whisk in flour, and cook until flour turns from white to a nutty brown color, 2 to 3 minutes. Stir in onion and cook until transparent, about 5 minutes. Add meats and brown until no longer pink, 10 to 12 minutes; stir in Cajun seasoning and garlic powder; drain fat. Cool to room temperature.

2 lbs ground pork or 2 lbs ground turkey
1/2 cup chopped onion
1/4 cup chopped green chili
2 teaspoons chili powder
8 ounces tomato sauce
1/2 teaspoon garlic powder
8 ounces cheddar cheese, shredded
1/2 cup sour cream
1 egg white, beaten stiff

Steps:

  • Heat oven to 375°F.
  • Cook ground beef. Drain.
  • Add to the cooked ground beef: onion, green chiles, chili powder, tomato sauce, and garlic powder. Simmer 8-10 minutes.
