This recipe was borne from a desire to use up Mexican hot chocolate discs, which have a lot of sugar and some oil already. I used Ibarra® brand and the brownies were fantastic with a mild cinnamon flavor. I wouldn't try to substitute this ingredient.

1 ½ teaspoons instant coffee granules
¼ cup boiling water, or as needed
3 Mexican hot chocolate drink tablets (such as Nestle® Abuelita®)
½ cup unsalted butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon coarse salt
¾ cup all-purpose flour
2 large eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch baking pan with parchment paper.
