Time 20m

Yield 6 serving(s)

Number Of Ingredients 10

2 tablespoons olive oil
1 small onion, finely chopped
1/2 small green pepper, cut in thin rings
1/2 small red pepper, cut in thin rings
2 tablespoons chopped cilantro
1 green chili pepper, seeded and finely chopped
1 3/4 cups whole kernel corn
4 ounces mushrooms, sliced
salt and black pepper
8 fresh cilantro stems, to garnish

Steps:

  • Heat oil in a heavy skillet over medium heat.
  • Add onion, bell peppers, chopped cilantro and chile.
  • Cook 5 minutes, stirring occasionally or until soft.
  • Stir in corn, mushrooms, salt and pepper.
  • Cook 5 minutes, stirring occasionally.
  • Transfer to a warmed serving dish and garnish with cilantro.

Tips:

  • For a crispy and flavorful coating, use a combination of flour, cornstarch, baking powder, and spices. The cornstarch helps to create a crispy crust, while the baking powder helps to make the coating light and airy.
  • Use fresh, sweet corn for the best flavor. If you're using frozen corn, be sure to thaw it completely before cooking.
  • To prevent the corn from sticking to the pan, make sure the oil is hot before adding the corn. You can test the oil by dropping a small piece of corn into it. If the corn sizzles immediately, the oil is hot enough.
  • Don't overcrowd the pan when frying the corn. This will prevent the corn from cooking evenly.
  • Cook the corn until it is golden brown and crispy. This will usually take about 3-4 minutes per side.
  • Serve the corn immediately with your favorite dipping sauce.

Conclusion:

Mexican fried corn is a delicious and easy-to-make snack or side dish. It is perfect for parties, potlucks, or a quick and easy meal. With its crispy coating and flavorful filling, this dish is sure to be a hit with everyone who tries it. So next time you're looking for a tasty and satisfying snack, give Mexican fried corn a try. You won't be disappointed!
