1 large English cucumber
1 can(s) Mexican corn (7 oz)
1 large tomato, chopped or small can tomatoes & green chilis
1 small red onion, chopped
2 green onions, chopped
4 Tbsp red wine vinegar
1 Tbsp fresh squeezed lemon or lime juice
1 Tbsp cumin
1 clove garlic, minced
pinch red pepper flakes
salt & pepper
3 Tbsp fresh chopped cilantro

Steps:

  • 1. Chop cucumber, tomato, onions, and salt. Add to a strainer for 10 mins to release water.
  • 2. Add to a bowl with the rest of the ingredients. Salt and pepper to taste. Refrigerate for at least one hour.

2 (15.25 ounce) cans whole kernel corn, drained
2 tomatoes, chopped
1 (3 ounce) can bacon bits
8 ounces shredded Cheddar cheese
1 green onions

Steps:

  • Prepare corn bread mix according to package directions, adding green chiles. Set aside, allow to cool, and crumble.

1/2 bunch cilantro, chopped
2/3 cup red onion, diced
1 jalapeno, seeded and chopped
