3 medium vine-ripened tomatoes
4 cups drained canned chick-peas (two 19-ounce cans)
1/4 cup extra-virgin olive oil
1/4 cup fresh lime juice plus additional to taste
3 tablespoons chopped fresh cilantro leaves
ground black pepper
*available at some specialty foods shops.

Steps:

  • Rinse chipotles. Wearing rubber gloves, separately seed and mince chipotles and jalape‱os. Mince onion and garlic. Peel, seed, and chop tomatoes. Rinse and drain chick-peas and in a large bowl stir together all ingredients except additional lime juice. Chill salad, covered, at least 2 hours and up to 1 day. Season salad with salt and add additional lime juice. Serve salad at cool room temperature.

Tips:

  • Properly Prepare the Chickpeas: Ensure the chickpeas are thoroughly cooked and tender before using them in the salad. If using canned chickpeas, rinse and drain them well before adding them to the salad.
  • Fresh Ingredients Make a Difference: Use fresh, ripe vegetables and herbs for the best flavor. Fresh cilantro, red onion, and avocado add vibrancy and brightness to the salad.
  • Adjust the Spice Level: The jalapeño adds a mild spice to the salad, but you can adjust the amount to your preference. For a spicier salad, use more jalapeño or add a pinch of cayenne pepper.
  • Balance the Flavors: The dressing is a key element in bringing all the flavors together. Use a balance of lime juice, olive oil, cumin, and salt to create a flavorful and tangy dressing.
  • Let the Salad Marinate: Allowing the salad to marinate for at least 30 minutes before serving allows the flavors to meld and develop. This step enhances the overall taste of the salad.
  • Serve with Complementary Sides: Mexican chickpea salad pairs well with various side dishes. Consider serving it with grilled or roasted chicken, fish, or tofu for a complete meal. It can also be served as a side dish to tacos or burritos.
