First, make a quick chili of beef, black beans, corn, green pepper and onion seasoned with chile power and cumin. Spread that in a baking dish, top with a simple cornbread batter and pop it into the oven. In about a half hour: tamale pie. Serve with hot sauce, a dollop of sour cream and a few slices of avocado. 2 teaspoons olive oil
1 onion (, chopped)
1 bell pepper (red, green, yellow or orange) (, seeded and chopped)
1 jalapeno (, seeded and chopped)
1 tablespoon minced garlic
1 tablespoon chili powder
2 teaspoon ground cumin
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 can (28-ounce) diced or crushed tomatoes
½ cup less-sodium chicken broth
1 cup corn kernels ((fresh, canned or frozen))
1 can (12-ounce) kidney or black beans (, drained and rinsed)
1 cup shredded cheddar cheese
1 cup cornmeal
¼ cup all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher or coarse salt
1 tablespoon sugar
1 cup whole milk or buttermilk
1 large egg
3 tablespoons chopped scallions ((optional))

Steps:

  • Preheat the oven to 375°F. Spray a 2 ½-quart casserole or a 12-inch ovenproof pan or skillet with nonstick cooking spray.

  • While the mixture simmers, combine the cornmeal, flour, baking powder, salt, and sugar in a large bowl. In a smaller bowl, mix the milk, egg, scallions (if using) and butter together. Add the milk mixture to the dry ingredients, and stir just until they are barely combined.
  • If you are baking the casserole in a casserole pan, transfer the meat mixture to that casserole. Otherwise leave the mixture in the ovenproof pan. Sprinkle the cheese over the meat mixture. Spread the cornbread topping evenly over the cheese; it helps to dollop it on by rounded tablespoons, then use a knife or offset spatula to spread it out fairly evenly.
  • Bake the casserole until the top is lightly browned and set, about 25 minutes. Place the skillet on a wire rack to cool for at least 10 minutes. Serve the Tamale Pie hot or warm.

1/4 pound crumbled, cooked bacon
1/2 pound turkey/pork sausage, cooked, drained

1 c cornmeal
1 can(s) cream style corn
1 tsp baking powder
1 c butter milk (if you don't have buttermilk-you can measure a scant cup of milk and add white vinegar or lemon juice, stir and let it sit 10 minutes)
2 c shredded cheddar cheese separated (1 cup each)
1 can(s) 4 oz green chiles or diced jalapenos
2 Tbsp sugar
1 tsp salt separated
1 tsp ground cumin
1/2 tsp ground black pepper
1 medium onion, diced
1 lb ground beef

Steps:

  • 1. In a large cast iron skillet brown ground beef and onion. Drain and pour into a medium mixing bowl. Add 1/2 teaspoon salt, 1/2 teaspoon pepper, and teaspoon cumin. Stir and set aside.
  • 2. Preheat oven to 400 degrees. In a large mixing bowl add cornmeal, baking powder, sugar, 1/2 teaspoon salt. Then add 1 cup cheddar and coat cheese well with the dry ingredients. Then add cream style corn, milk, and green chiles.
  • 3. Pour half of the cornbread mixture in the cast iron skillet that the ground beef was cooked in. Pour all of the ground beef mixture on top of the cornbread mixture. Top with remaining cornbread mixture.

1 cup hot water
1 1/2 cups yellow cornmeal
