1/3 cup cornstarch
1 tablespoon finely grated lemon zest, plus more for garnish (optional)
1/4 teaspoon coarse salt
3 1/2 cups milk
1 cup freshly squeezed lemon juice
1 cup heavy cream

Tips:

  • For a richer flavor, use unsalted butter and let it come to room temperature before creaming it with the sugar.
  • Be sure to zest the lemons before juicing them, as this will give the pudding a more intense lemon flavor.
  • If you don't have a double boiler, you can melt the butter and chocolate in a microwave-safe bowl. Be sure to stir the mixture every 30 seconds to prevent it from overheating.
  • Don't overbeat the egg yolks and sugar mixture. Overbeating will make the pudding curdle.
  • Bake the pudding in a water bath to prevent it from curdling.
  • Let the pudding cool completely before serving. This will help it to set and develop its full flavor.
  • Serve the pudding with a dollop of whipped cream or a scoop of ice cream.
