Yield Serves 2

Number Of Ingredients 4

4 small or medium leeks, tough outer leaves discarded and leeks trimmed to about 7 inches long and cut lengthwise into quarters or eighths
2 tablespoons unsalted butter
1/4 cup chicken broth
1 teaspoon freshly grated lemon zest

Steps:

  • In a shallow dish soak leeks in cold water to cover 15 minutes, rubbing occasionally to remove any grit. In a heavy skillet melt butter over moderate heat. lift leeks out of the water and with water still clinging to them add to skillet. Cook leeks, stirring occasionally, five minutes and add broth and zest. Braise leeks, covered, 5 minutes, or until very tender, and season with salt and pepper.

Tips:

  • Select the right leeks: Choose leeks that are firm, have a bright white base, and are about 1 to 1 1/2 inches in diameter. Avoid leeks that are wilted, have yellow or brown spots, or have thick, tough leaves.
  • Clean the leeks thoroughly: Leeks can be dirty, so it's important to clean them thoroughly before using them. Trim off the root end and the dark green leaves. Cut the leeks lengthwise and rinse them under cold water, separating the layers to remove any dirt or grit.
  • Slice the leeks thinly: For this recipe, you'll want to slice the leeks thinly. This will help them cook evenly and absorb the flavors of the other ingredients.
  • Use a good quality olive oil: Olive oil is a key ingredient in this recipe, so it's important to use a good quality oil. Extra virgin olive oil is the best choice, as it has a rich flavor and aroma.
  • Don't overcrowd the pan: When cooking the leeks, don't overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to steam rather than sauté.
  • Season to taste: Once the leeks are cooked, season them to taste with salt, pepper, and lemon juice. You can also add a pinch of red pepper flakes for a little extra spice.

Conclusion:

Mediterranean-style leeks with lemon is a simple but delicious dish that is perfect for a light lunch or dinner. The leeks are tender and flavorful, and the lemon juice adds a bright, refreshing flavor. This dish is also very healthy, as leeks are a good source of vitamins, minerals, and antioxidants.
