3 cups baby spinach leaves

1 ounce crumbled feta cheese

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir baby spinach in hot oil until very tender, about 5 minutes. Season spinach evenly with salt, pepper, garlic powder, and onion powder, turning with tongs while sprinkling. Add tomatoes; cook and stir until tomatoes begin to soften, about 90 seconds. 1 small onion, chopped

1 can (15 ounces) cannellini beans, rinsed and drained

2 onions, chopped
2 celery ribs, finely chopped

1 cup uncooked orzo pasta
2 tablespoons extra virgin olive oil, divided
1 pound ground lamb
2 cloves garlic, chopped
1 tablespoon ground coriander
salt and pepper to taste
4 cups fresh spinach leaves, chopped
3 tomatoes, seeded and chopped
1 lemon, zested and juiced
¼ cup chopped fresh mint leaves
¼ cup chopped fresh parsley
5 green onions, chopped
1 cup crumbled feta cheese

Steps:

  • Bring a pot of lightly salted water to a boil. Add orzo pasta, cook for 5 minutes, or until al dente. Drain.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Place the lamb and garlic in the skillet. Season lamb with coriander, salt, and pepper. Cook until evenly browned. Remove from heat, and drain.
  • In a large bowl, mix the spinach, tomatoes, lemon juice and zest, mint, parsley, green onions, and remaining olive oil. Toss with the orzo, lamb, and feta cheese to serve.

1/2 cup kraft cream cheese with chives and onions
1/2 cup feta cheese, crumbled (the sharper the better)
1/4 black olives
32 inches flour tortillas (spinach flavored preferrably)
4 ounces smoked turkey, thinly sliced
1 cup loosley packed thoroughly washed spinach leaves
1/4-1/2 teaspoon oregano

Steps:

  • Chop up olives.
  • Combine cream cheese, feta cheese, olives and oregano in bowl and mix.
  • Evenly spread the mixture over entire tortilla.
  • Place turkey over the cream cheese mixture on half of each tortilla.
  • Place spinach leaves on top of turkey.
  • To assemble just start with the side that is topped with the turkey and roll up tightly.
  • Wrap each sandwich with saran wrap.
  • Refrigerate wraps at least 1 hour.
  • Before serving, unwrap, and trim of ends of each roll.
  • Cut wraps into 3 sections.
  • Cut each section on a slight diagonal into half.
  • Wraps can be made a day ahead.

It is very rich and I usually decrease the salt and dried basil to help that a bit, and I thinned it down just a bit with milk, but otherwise it's a fancy-looking dish with very little effort.

1 (10 ounce) package frozen spinach, thawed
12 ounces medium shrimp (uncooked, peeled, & deveined)

Steps:

  • Combine sour cream, feta, red pepper, salt, garlic, and basil.
  • Set aside.
  • Cook fettucine according to pkg directions, but after first 8 minutes, add spinach and shrimp to boiling water/pasta.
  • Boil 2 more minutes.
  • Drain thoroughly.
  • Add hot pasta/shrimp mixture to sour cream mixture; toss lightly.

1 small orange bell pepper, seeded and quartered
2 large Portobello mushroom caps, stemmed, sliced
1 small summer squash, cut on bias
1 (14-ounce) can artichoke hearts, drained, rinsed and quartered
1/4 cup olive oil, plus more to taste
Salt and freshly ground black pepper
1/2 cup feta cheese, diced
1/4 cup kalamata olives, pitted
3 cups baby spinach
1 cup packed basil leaves

Steps:

  • Place all vegetables in a large mixing bowl. Add 1/4 cup oil and season with salt and pepper, to taste. Toss well making sure each vegetable gets covered with oil. Place a grill pan over medium heat. Once heated, place your vegetables on grill and cook accordingly: grill mushrooms about 5 minutes per side; peppers and squash about 3 minutes per side.
  • Once all the vegetables are grilled place them in a large serving bowl to slightly cool. Dice and add feta cheese, pitted olives, spinach and basil leaves. Gently toss to mix well and drizzle more oil, to taste, if necessary and serve.

1 tablespoon olive oil
1 shallot, thinly sliced
3 garlic cloves, minced
1 teaspoon dried thyme
1 tablespoon paprika
1 cup dried brown lentils (or green lentils)
5 cups vegetable broth
fresh black pepper
1 (24 ounce) can fire-roasted tomatoes, with juice
4 cups fresh Baby Spinach (or chopped spinach)
2/3 cup kalamata olive, roughly chopped

Steps:

  • Preheat a 4-quart soup pot over medium high heat. Saute shallots in oil until translucent, about 3 minutes. Add garlic and saute for 15 seconds or so, then mix in the thyme and paprika.
  • Add the lentils, broth, and pepper. Cover and bring to a boil. Once boiling, turn heat to medium and cook for 25 minutes, stirring occasionally, until lentils are almost tender. Add the tomatoes, crushing the tomatoes with your hands to get them into small pieces, as you add them. Bring to a boil, then lower heat to simmer for another 20 minutes or so, or until lentils are very tender. Add spinach and olives and stir frequently until spinach is wilted and velvetty. Add water to thin, if necessary.
  • Taste for salt, and let sit for 10 minutes or so for flavors to marry, then serve!

2 tablespoons butter
3 sprigs basil
1 teaspoon coriander seed
1 cup sliced leek
1 1/2 lbs red potatoes, peels and cubed (about 4 cups)
30 fluid ounces broth
1/4 cup water
4 cups coarsely chopped spinach leaves
1 teaspoon lemon juice
salt and pepper
sour cream or yogurt (to garnish)

Steps:

  • Melt the butter in a 4 quart saucepan
  • Add the basil, coriander seeds and the leeks
  • Cook until the leeks are tender, stirring often
  • Add the cubed potatoes, broth and water
  • Heat to boiling, reduce the heat to low
  • Cover the pot and simmer for 25 minutes until the potatoes are tender, stirring occasionally
  • Stir in the spinach, lemon juice and salt and pepper
  • Simmer for 5 minutes
  • Serve garnished with a dollop of sour cream or yogurt

1/2 cup green onion, sliced
1 clove garlic, pressed
1 1/2 teaspoons dill, chopped
2 medium roma tomatoes, chopped
1 1/4 lbs spinach, rinsed and drained,stems removed
3 -4 tablespoons feta cheese, crumbled
1 tablespoon capers
pepper

Steps:

  • Combine onions, garlic, dill and 1/4 cup water.
  • Stir-fry over medium heat until onions are soft and almost all liquid has evaporated.
  • Transfer mixture to bowl and stir in tomatoes.
  • Keep warm.
  • Add half the spinach to fry pan and 1 Tab water.
  • Stir-fry over medium heat until spinach is just beginning to wilt.
  • Add remaining spinach, stir-fry until all spinach is wilted (2 minutes) With slotted spoon, transfer spinach to a platter and spread out slightly; discard liquid from pan.
  • Top spinach with tomato mixture Sprinkle with Feta and capers.

4 medium boneless skinless chicken breasts
1/2 cup bottled low fat Italian dressing
36 fresh spinach leaves, divided
1/2 cup sliced green onions
2 teaspoons minced garlic
2 tablespoons soy sauce
1/2 cup sliced fresh mushrooms
1/4 cup chopped black olives, drained
1/2 cup white cooking wine
1 teaspoon salt
1 teaspoon black pepper
4 cups cooked long grain rice
Garnish:
1/4 cup freshly grated Parmesan cheese

Steps:

  • Place chicken and dressing in a gallon-size zipper seal bag. Seal and marinate in refrigerator for 2-3 hours. Prepare charcoal or gas grill to medium-high heat. Remove chicken from bag and discard marinade. Grill chicken for 2 minutes on each side. Remove from grill. Tear four 12-inch square pieces of heavy duty aluminum foil. Place 5 spinach leaves in center of each piece of foil. Place a chicken breast in center of each. Stir next eight ingredients together in a small bowl. Divide on top of chicken breasts. Place 4 additional spinach leaves on top of each. Fold foil over top to make sealed packets. Place packets, seam side up on grill, away from direct heat. Cover and grill for one hour. To serve, spoon contents of each packet over 1 cup of rice. Sprinkle each with 1 tablespoon of cheese. Serve immediately.

1/2 cup chopped onion
2 teaspoons olive oil
1/4 cup pine nuts
2 garlic cloves, minced
1 9-ounce frozen chopped spinach in a pouch, thawed, well drained
1/2 teaspoon pepper
1/2 teaspoon Italian seasoning
1/2 teaspoon basil leaves
2 ounces (1/3 cup) crumbled feta cheese
1 1/4 cups mashed potato flakes
1/2 cup apple butter
1/2 cup chopped onion
1 tablespoon Dijon-style mustard
1 tablespoon prepared horseradish
1 1/4 pounds lean ground lamb or turkey
1 1/4 pounds Italian sausage, casing removed
2 eggs, slightly beaten
2 to 3 tablespoons pine nuts
Chopped green onions for garnish

Steps:

  • For the filling, cook the onion in the oil in a small skillet over medium heat 2 to 3 minutes or until tender. Add pine nuts and garlic. Cook, stirring frequently, for 2 to 3 minutes or until garlic is browned. Reduce heat to medium. Stir in spinach and seasonings; cook an additional 1 minute or until thoroughly heated. Starting from short end, roll up meat tightly to enclose filling, using foil as a guide. Pinch edges and ends to seal.
  • Place wire rack in baking pan (15 inches by 10 inches by 1 inch). Cover rack with foil; pierce foil in several places with knife to allow grease to drain as meat cooks. Place meat roll, seam side down, on foil-lined rack. Press the pine nuts onto top of meat roll. Bake for 30 minutes. Cover loosely with foil. Insert meat thermometer through foil and into center of loaf. Bake an additional 35 to 50 minutes or until meat is thoroughly cooked and meat thermometer registers 160 degrees. Let stand 15 minutes before slicing. Garnish with green onions.
