MIXED BERRY SPINACH SALAD WITH STRAWBERRY BALSAMIC VINAIGRETTE DRESSING RECIPE BY TASTY

Mixed Berry Spinach Salad With Strawberry Balsamic Vinaigrette Dressing Recipe by Tasty image

Here's what you need: baby spinach, strawberry, blueberry, red onion, sweet apple, candied walnuts, strawberry, balsamic vinegar, extra virgin olive oil, dijon mustard, honey, garlic, salt, pepper, feta cheese

Provided by Tasty

Categories     Lunch

Time 30m

Yield 6 servings

Number Of Ingredients 15

5 oz baby spinach
1 cup strawberry, sliced
½ cup blueberry
½ red onion, thinly sliced
1 sweet apple, cored, halved and thinly sliced
1 cup candied walnuts, chopped
1 cup strawberry
¼ cup balsamic vinegar
¼ cup extra virgin olive oil
1 tablespoon dijon mustard
1 tablespoon honey
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon pepper
⅔ cup feta cheese, as desired

Steps:

  • For the dressing, push a straw through the strawberries from the tip to the green top to remove the hull. (Or you can cut it off with a knife!)
  • Add the rest of the dressing ingredients.
  • Blend until smooth. Refrigerate.
  • Cut strawberries, apple, and onion into slices.
  • Combine all the salad ingredients in a large bowl.
  • Drizzle with desired amount of dressing and toss to coat. (Spinach wilts easily, don't add dressing until ready to eat!)
  • Sprinkle feta cheese on top and serve.
  • Enjoy!

STRAWBERRY AND SPINACH SALAD WITH BALSAMIC VINAIGRETTE

Strawberry and Spinach Salad With Balsamic Vinaigrette image

I like the balsamic vinagrette combined with the sweet strawberries and fresh spinach. Unlike most salads with sweet berries the flavors are tangy and mild rather than sugary or syrup-y, allowing the sweetness of the berries to shine through. A little goat cheese on each serving would be nice but is optional. I hope you like it, too.

I found the original recipe on Allrecipes.com, although I tweeked it a bit. The balsamic really adds alot of flavor to this salad and the almonds give it a nice crunch. You could toss in some cooked chicken and call it dinner real easy.

STRAWBERRY AND SPINACH SALAD WITH HONEY BALSAMIC VINAIGRETTE

Strawberry and Spinach Salad with Honey Balsamic Vinaigrette image

This is a great easy summer salad, with a lot of options as to mixing and matching. Plus the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional but a pecan or roasted almond adds a little crunch and more protein!

Tips for Making Strawberry and Spinach Salad with Honey Balsamic Vinaigrette

  • For the freshest salad, use ripe, in-season strawberries and tender baby spinach leaves.
  • If you don't have balsamic vinegar, you can substitute red wine vinegar or apple cider vinegar.
  • To make a sweeter vinaigrette, add a little more honey or agave nectar.
  • If you like a tangier vinaigrette, add a squeeze of lemon juice or a splash of white wine vinegar.
  • To add a bit of crunch to the salad, add some chopped nuts or seeds, such as almonds, walnuts, or sunflower seeds.
