MEDITERRANEAN HUMMUS APPETIZER

Mediterranean Hummus Appetizer image

Inspired by Zea's Hummus Appetizer Platter. Refrigerate time not included. (So good I strongly suggest doubling the hummus recipe since you'll already have on hand the toppings.) Note: I made a remarkable discovery. Adding lemon zest makes for extraordinary so I added it as an optional ingredient. Update: Substituting about half of the olive oil with chickpea juice makes for a fluffier hummus. Note: Since originally posting this recipe, I've come to realize that boiling your chickpeas for about 5 minutes makes for a better end product. Make sure you reserve the juice should you want a thinner hummus. Should you cook your own chickpeas from dried, use 1 1/2 cups drained chickpeas to equal the amount in a 15 ounce can.

STRAWBERRY-BLACKBERRY SUMMER TRIFLE

Strawberry-Blackberry Summer Trifle image

Elderflower syrup is sweetly floral, similar in taste to honeysuckle. It's common throughout Europe and the UK, and has begun to make inroads in specialty stores and cocktail bars in the US. If you can't find it, the syrup from canned lychees makes a good substitute. Trifles are a classic British summer dessert; they're light, sweet, and full of juicy fruit.

Time 3h15m

Yield 10 to 12 servings

Number Of Ingredients 6

5 cups strawberries (about 2 pounds)
3 cups blackberries (about 10 ounces)
3/4 cup sugar
2 cups heavy cream, chilled
1/3 cup elderflower syrup or lychee syrup
1 prepared angel food cake

Steps:

  • Reserve a handful of the prettiest whole strawberries and blackberries for topping the trifle.
  • Hull and halve the remaining strawberries, and toss them with the sugar in a medium bowl, cover with plastic wrap and set aside until they get juicy, about 1 hour. (If you're in a hurry, set the bowl over a pot of simmering water for about 5 minutes to speed this up.)
  • Whip the cream in a chilled bowl until it holds soft peaks. Fold the elderflower syrup into the cream and keep chilled until ready to assemble the trifle.
  • Tear or cut the angel food cake into 2-inch pieces. Scatter about half the cake on the bottom of a trifle dish or clear glass bowl. Ladle half of the berries and their juices on top of the cake, and then top with half the whipped cream. Repeat with the remaining cake, berries and cream to finish the trifle. Garnish the top of the trifle with the reserved whole berries and refrigerate for 2 and up to 24 hours. Serve chilled.

8 egg yolks
1 1/4 cups sugar
1 teaspoon vanilla extract
2 cups whole milk
1/2 pint whipping cream
2 tablespoons powdered sugar
strawberries, for garnish

  • Cut pound cake in half lengthwise and trim halves to cover bottom of glass trifle dish, or a 9 inch straightsided glass bowl. Sprinkle cake with Sherry to soak, and spread cake with jam, heating jam if necessary to facilitate spreading. Place berries, kiwi and peaches on top of cake.
  • Heat the milk in top of double boiler over mediumlow heat until film forms on it. Beat the eggs with the sugar and vanilla in a double boiler until it forms a ribbon. Then slowly pour the hot milk into the eggs, beating all the time. Place the mixture in a heavy saucepan and stir over low heat until the custard coats the back of a spoon, 10 to 15 minutes. Don't let it boil. Strain it through a fine sieve. Cool the custard in a bowl set in ice water, stirring occasionally. Pour cooled custard over the fruit. Refrigerate, covered, at least 4 hours.
  • Whip cream to soft peaks. Beat in powdered sugar and continue beating until stiff. Spread whipped cream over the trifle and garnish with strawberries.

LEMON TIRAMISU TRIFLE

Lemon Tiramisu Trifle image

Creamy, lemony layers are brightened by berries in this no-bake cross between tiramisu and trifle. Kids can assemble this treat with very little help.

Categories     dessert

Time 8h20m

Yield 6 to 8 servings

Number Of Ingredients 9

1/4 cup fresh lemon juice
1/4 cup granulated sugar
12-ounces cream cheese, softened
One 8-ounce jar prepared lemon curd
2 cups heavy cream
22 hard ladyfinger cookies
3 cups mixed raspberries and sliced strawberries
Powdered sugar, for garnish
Whipped cream, for serving

Steps:

  • In a small measuring cup, mix the lemon juice with the sugar and 1/4 cup water until the sugar is dissolved. Set aside.
  • Place the cream cheese, lemon curd and heavy cream in a food processor and process until smooth and a bit fluffy.
  • To assemble the tiramisu, place half the ladyfingers in the bottom of an 8-inch square baking dish, breaking a few to fit, and drizzle with half of the lemon syrup. Top with half the lemon cream and 1 cup mixed berries. Repeat the layers, using the remaining ladyfingers, syrup and lemon cream.
  • Cover with plastic wrap and chill at least 8 hours or overnight. Before serving, top with the remaining 2 cups of berries and dust with powdered sugar. Serve with whipped cream on the side.

Tips:

  • Choose ripe and flavorful ingredients: The quality of your ingredients will greatly impact the taste of your hummus trifle. Use ripe avocados, fresh herbs, and tangy feta cheese.
  • Make sure your hummus is smooth and creamy: If your hummus is too thick or chunky, it will not layer well in the trifle. Use a food processor or blender to achieve a smooth, creamy consistency.
  • Don't overmix the yogurt mixture: Overmixing can cause the yogurt to become too thin and runny. Gently fold the yogurt, tahini, and lemon juice together until just combined.
  • Layer the trifle in the correct order: The order of the layers is important for both flavor and texture. Start with a layer of hummus, followed by a layer of yogurt mixture, a layer of chopped vegetables, and a layer of crumbled feta cheese. Repeat the layers until you reach the top of the trifle dish.
  • Chill the trifle before serving: Chilling the trifle allows the flavors to meld together and the layers to set. For the best results, chill the trifle for at least 2 hours before serving.

Conclusion:

The Mediterranean hummus trifle is a delicious and unique appetizer or snack that is perfect for any occasion. With its layers of creamy hummus, tangy yogurt, fresh vegetables, and flavorful feta cheese, this trifle is sure to be a hit. Plus, it's easy to make and can be tailored to your own taste preferences. So next time you're looking for a new and exciting appetizer, give the Mediterranean hummus trifle a try.
