Yield 24 EGG HALVES

Number Of Ingredients 10

1 dozen large eggs
1 tablespoon finely chopped flat-leaf parsley, more for garnish
1 tablespoon finely chopped, rinsed capers
1/4 teaspoon anchovy paste, more to taste
Zest of 1 lemon, finely minced
Juice of 1/2 lemon
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 tablespoons cold water
Pepper to taste

Steps:

  • Place eggs in a pot large enough to hold them all in a single layer. Cover by 3 inches of cold water and place on the stovetop over high heat. Once the water starts simmering briskly, reduce heat to medium high and cook for 12 minutes. Use a slotted spoon to transfer eggs to a bowl of ice-cold water. Let cool for 5 or 10 minutes, then peel. Slice eggs lengthwise. Remove yolks and place them in a medium bowl. Arrange egg white halves on a rimmed baking sheet. To prepare the filling, add parsley, capers, anchovy paste, lemon zest, mayonnaise, mustard and water to yolks and mash. Taste and add pepper. The filling will be salty from the capers and anchovy, so additional salt will not be needed. Use two small spoons to scoop filling into egg white halves. Sprinkle with chopped parsley and serve.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the deviled eggs will taste. When possible, use organic, free-range eggs and high-quality mayonnaise, mustard, and herbs.
  • Hard-boil the eggs perfectly: To achieve the perfect hard-boiled egg, place the eggs in a single layer in a saucepan and cover them with cold water. Bring the water to a boil over high heat, then remove the pan from the heat and cover it. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be. Drain the hot water and immediately transfer the eggs to a bowl of ice water to stop the cooking process.
  • Peel the eggs carefully: To prevent the eggs from cracking, peel them under cold running water. Start by gently tapping the egg on a hard surface to crack the shell, then roll the egg between your hands to loosen the shell. Peel the shell away from the egg, starting from the wide end.
  • Make the filling ahead of time: The deviled egg filling can be made ahead of time and stored in the refrigerator for up to 3 days. This makes them a great make-ahead appetizer.
  • Garnish the eggs before serving: Garnish the deviled eggs with a sprinkle of paprika, chopped chives, or crumbled bacon just before serving. This will add color and flavor to the eggs.

Conclusion:

Mediterranean deviled eggs are a delicious and easy-to-make appetizer that is perfect for any occasion. They are made with a combination of hard-boiled eggs, mayonnaise, mustard, herbs, and spices. The eggs are then filled with the mixture and garnished with a sprinkle of paprika, chopped chives, or crumbled bacon. These deviled eggs are a surefire hit at any party or gathering.
