- 1. In a large plastic ziplock bag, combine all dry ingredients. Then, add the wet ingredients to the bag and mix thoroughly.
- 2. Add ground beef chuck until uniformly mixed. Try not to over mix. Form into a round loaf. (I usually refrigerate for a little while to firm up, but it's not necessary. In fact, you can make the loaf the day before and refrigerate until ready to use.)
- 3. Cut 2 lengths of aluminum foil approximately 29" long. Fold lengthwise 3 times. You will end up with two strips of foil approximately 3 1/2" x 29" long. Spray your crock pot with butter flavored cooking spray. I use a standard-size crock pot, approximately 9" across its round top. Place your two lengths of foil in the form of an "X" in the crock pot. This will act as a sling to lift the meatloaf out easily when it is done cooking. Spray foil with non-stick spray as well. If ends stick out of the top of the crock pot, simply fold them down into the pot.
- 4. Add meatloaf to crock pot. Cover and cook on low for 5-5 1/2 hours. About an hour before the meatloaf is done, combine all of sauce ingredients. Pour sauce on top of meatloaf 35-45 before the end of cooking time.
- 5. When meatloaf is done, lift carefully out of crock pot with your foil sling to a serving platter.

I was intrigued by the idea of cooking meatloaf in the crockpot but the couple of recipes I tried were very greasy and fell apart too easily. I came up with this recipe that my family really enjoys. I think the potatoes on the bottom are really key to the success of the result because they keep the meat up off the bottom and let it cook out of the liquid. I know the recipe is going to seem like too little liquid to start with, but the crockpot retains all the liquid inside and really is enough. Let me know what you think.

- Spray crockpot with non-stick cooking spray to help make clean up easier. Layer sliced potatoes and onions on bottom.
- Mix all the meatloaf ingredients together really well. I use an electric mixer to make sure everything is evenly mixed.
- Shape into an oval loaf and lay on top of the potatoes and onions - try to not let it touch the sides of the crock to prevent the heat of the crock from overcooking the meatloaf.
- Mix all the topping ingredients together and spoon on top of the meatoaf. Cook on high for an hour, then turn the crockpot down to low and cook an additional 4-5 hours or till its done all the way through.

- Coat 3 1/2-quart slow cooker with cooking spray. Tear off two lengths of aluminum foil long enough to fit in bottom of cooker and extend 3 inches over each side of cooker. Fold each foil strip lengthwise to form 2-inch-wide strips. Arrange foil strips in a cross fashion in cooker, pressing strip in bottom of cooker and extending ends over sides of cooker.
- Combine beef and next 5 ingredients; shape mixture into a loaf the shape of the slow cooker container. Place loaf in slow cooker over foil strips. (Foil strips become "handles" to remove meat loaf from slow cooker.)Make a shallow indention on top of meat loaf. Combine ketchup and salsa (chili sauce); pour over meat loaf.

- In a large bowl combine all ingredients except potatoes, second amount of seasoned salt and olive oil. Mix thoroughly and pat into the bottom of your crock. I just level mine out, covering the entire bottom of the crock. Then, take a large piece of aluminum foil and place the diced potatoes, drizzle with olive oil and season with seasoned salt. Then, fold the aluminum foil into a nice packet and place on top of the meatloaf.

- Mix first 7 ingredients in a bowl. Be careful not to overwork, otherwise your loaf will be tough (hint for any meatloaf!).
- In another bowl, beat eggs with ketchup, sour cream and sriracha sauce. Add to meat mixture.
- Stir in cracker/breadcrumbs and cheese until just mixed inches.
- Shape into two loaves, place in crock pot.
- Mix tomato sauce and chipotle pepper, spread on top of loaf.
- Cook on med-low for 5 hours or until done.
- If desired, sprinkle some shredded Chipotle cheese on top of loaf about 10 mins before serving. You can also make a gravy out of the "juice" that results in bottom of pan by adding some beef broth and thickening with cornstarch.

- 1. TIPS: If you grind meat yourself, add the fennel seed and grind with the meat. Spray crock with PAM for easier clean up.
- 2. In a large bowl; add ingredients for meatloaf. With hands combine the mixture.
- 3. Form meat mixture into a loaf and place in the center of Crock Pot. Place potatoes and carrots around meatloaf. Drizzle oil on veggies and season before adding to the pot. Place the vegetables around the meatloaf. NOTE: would have been easier if I had seasoned the vegetables and drizzled oil before I putting them in the crock pot.
- 4. Combine ingredients for topping except for the mozzerella; set aside.
- 5. Cook on high for 4 hours. The last hour of cooking, remove lid and add the tomato sauce topping mixture to the top of the meatloaf; cover with lid. Once done, turn crock pot off, remove lid and add mozzerella to top of meatloaf, cover with lid and let set for about 15 minutes before serving. NOTE: The meatloaf will brown but not like it would if you baked it in an oven.
- 6. NOTES: Meatloaf is a dish of ground meat formed into a loaf shape, mixed with egg and breadcrumbs, then baked or in this case cooked in the crock pot. The loaf shape is formed by either cooking it in a loaf pan, or forming it by hand. Meatloaf is usually made from ground beef, although lamb, pork, veal, venison, bulk sausage and poultry or a combination of meats are also used. Variations are unlimited! Different taste for different folks. Choose seasoning that you like. You could add diced potatoes to the meat mixture and cubes of cheddar and/or mushrooms. You can even have a stuffed meatloaf, 2 layers of meat with a cheesy mushroom and onion filling. If you don't like a tomato sauce topping, leave off but I wouldn't leave off the cheese ;) Other toppings; BBQ sauce, Ketchup, or no topping at all. It really depends on the seasonings you choose. - Sliced the potatoes about 1/4 inch thick. Diced the onion and finely dice the green pepper salt and pepper to taste.
