MEAT FONDUE

Meat fondue image

Revisit an 80s dinner party classic - the meat fondue. The assembly job can be done before your guests arrive. Make some sauces yourself and buy the rest

Provided by Emma Freud

Categories     Buffet, Dinner, Main course

Time 30m

Number Of Ingredients 4

800g beef tenderloin or 4 rump steaks, cut into 1-inch cubes
1l good vegetable oil
crusty white bread
green salad

Steps:

  • Prepare your sauces (see below) in advance, and put in little bowls around the fondue burner, along with the meat, bread and salad. Season the meat.
  • When your guests are ready to eat, fill your fondue pan half-full of vegetable oil and heat on the hob until it's hot, but not smoking. You're aiming for around 190C, but if you haven't got a thermometer, throw in a cube of bread - when it takes about 30 secs to brown, it's ready.
  • Put the fondue burner on the table carefully so that it's stable, then, following the manufacturer's instructions, light the flame and put the pan on top.
  • Give each guest a fondue fork for dunking the meat in the hot oil. It should take 25-30 secs for rare, 30-35 secs for medium and 45-60 secs for well done. When the meat is cooked, dip it into the sauces, and pile it onto the bread. If you have some raw king prawns to cook in the fondue, they work really well too. CORRECTION NOTICEPlease be informed that in the July issue of BBC Good Food Magazine, it incorrectly stated that the temperature of the oil in this recipe should be 375C, the correct temperature of the oil should be 375 Fahrenheit or 190C. Tips:

  • Select high-quality meat: Choose tender and flavorful cuts of meat, such as ribeye, filet mignon, or sirloin. Look for meat with good marbling, as this will help keep it juicy and flavorful during cooking.
  • Cut the meat into thin strips: This will ensure that the meat cooks evenly and quickly. Aim for strips that are about 1/4-inch thick and 2-3 inches long.
  • Marinate the meat: Marinating the meat helps to tenderize it and infuse it with flavor. You can use a variety of marinades, such as olive oil, garlic, herbs, and spices. Marinate the meat for at least 30 minutes, or up to overnight.
  • Use a good quality fondue pot: A good fondue pot will distribute heat evenly and prevent the oil from splattering. Look for a pot that is made of stainless steel or cast iron.
  • Heat the fondue pot to the correct temperature: The ideal temperature for fondue is between 325°F and 350°F. Use a thermometer to monitor the temperature of the oil.
  • Cook the meat in small batches: Don't overcrowd the fondue pot, as this will cause the oil temperature to drop and the meat to cook unevenly. Cook the meat in small batches, about 3-4 pieces at a time.
  • Don't overcook the meat: Overcooked meat will be tough and chewy. Cook the meat just until it is cooked through, about 1-2 minutes per side.
  • Serve the fondue with a variety of dipping sauces: Some popular dipping sauces for fondue include cheese sauce, ranch dressing, and barbecue sauce. You can also serve the fondue with a variety of vegetables, such as broccoli, carrots, and celery.

Conclusion:

Meat fondue is a fun and easy way to enjoy a delicious and interactive meal with friends and family. By following these tips, you can ensure that your meat fondue is a success. So gather your friends, fire up the fondue pot, and enjoy a delicious and memorable meal!
