AVOCADO TOAST WITH EGG

Avocado Toast with Egg image

I love avocado toast, and if you add an egg to it you have a full meal. Sometimes I use balsamic vinegar to flavor the avocado instead of the lemon juice. You can make the egg any way you like, but I like it best fried or poached.

Time 10m

Yield 2

Number Of Ingredients 8

1 teaspoon butter
2 eggs
2 slices multigrain bread
1 ripe avocado, pitted, peeled
1 teaspoon lemon juice, or to taste
1 pinch cayenne pepper
sea salt to taste
ground black pepper to taste

Steps:

  • Melt butter in a skillet over medium-low heat. Crack eggs into the skillet side by side and cook until eggs are white on the bottom layer and firm enough to flip, 2 to 3 minutes. Flip eggs, trying not to crack the yolk, and cook until egg reaches desired doneness, 2 to 5 minutes more.
  • Meanwhile, toast bread slices to desired doneness, 3 to 5 minutes.
  • Mash avocado in a bowl; stir in lemon juice, cayenne pepper, and sea salt. Spread avocado mixture onto toast. Top with fried egg and season with sea salt and pepper.

Tips:

  • Choose ripe avocados that yield to gentle pressure. Unripe avocados will be hard and green, while overripe avocados will be mushy and brown.
  • Use a fork to mash the avocado instead of a food processor or blender. This will help to preserve the avocado's creamy texture.
  • Season the avocado mash with salt, pepper, and lemon juice to taste. You can also add other herbs and spices, such as garlic powder, onion powder, or chili powder.
  • Toast the bread until it is golden brown and crispy. This will help it to hold up to the avocado mash and egg.
  • Use a runny or over easy egg for the best results. A hard-boiled egg will be too dry.
  • Serve the avocado and egg toast immediately. The avocado will start to brown after a few minutes.

Conclusion:

Mashed avocado and egg toast is a simple but delicious breakfast or brunch recipe. It is packed with healthy fats, protein, and fiber, and it can be easily customized to your liking. With just a few simple ingredients, you can create a satisfying and nutritious meal that will keep you full and energized all morning long.
