FABRIZIO CARRO'S EGGPLANT PARMIGIANA

Fabrizio Carro's Eggplant Parmigiana image

Try this traditional recipe from Quattro Gastronomia Italiana chef Fabrizio Carro for a hearty meat-free meal.

Provided by Martha Stewart

Categories     Casserole Recipes

Number Of Ingredients 10

3 medium eggplants (not more than 4-inches in diameter), sliced into 1/2-inch-thick rounds
Coarse salt
1 cup '00' flour
4 cups canola oil
1 pound fresh mozzarella cheese, chopped
6 ounces Grana Padano cheese
1/2 cup packed basil leaves
2 1/2 tablespoons olive oil
Fine sea salt and freshly ground pepper
4 cups Tomato Sauce

Steps:

  • Lay eggplant slices in a single even layer on a rack set over rimmed baking sheets; generously season with salt. Let stand 15 minutes to release excess moisture; pat dry with paper towels.
  • Place flour in a shallow dish; dredge eggplant slices in flour, shaking off excess. In a large pot, heat canola oil to 300 degrees on a deep-fry thermometer. Working in batches, add eggplant slices to hot oil and cook, turning once, until lightly browned, about 3 minutes per side. Transfer to a paper towel-lined baking sheet to drain; repeat process with remaining eggplant.
  • Place mozzarella and Grana padano cheeses in the bowl of a food processor; process until just combined. Add basil leaves and olive oil; process until well combined. Season with fine sea salt and pepper and transfer to a disposable pastry bag.
  • Preheat oven to 350 degrees.
  • Set six 4-by-3-inch round ring molds in a large shallow baking dish. Place a dollop of tomato sauce at the bottom of each ring mold. Top with a slice of eggplant. Cut a small hole from the bottom of the pastry bag and pipe a layer of cheese mixture on top of eggplant. Top with another dollop of sauce, followed by another slice of eggplant. Repeat process until you have reached the top of the ring mold or have created four layers, ending with a slice of eggplant. Top with a little tomato sauce.
  • Transfer to oven and bake until cheese is melted and eggplant is warmed through, about 15 minutes. Using a spatula, carefully transfer filled ring molds to individual serving plates. Carefully remove ring mold before serving.

EGGPLANT PARMIGIANA WITH HOMEMADE MARINARA SAUCE

Eggplant Parmigiana with Homemade Marinara Sauce image

Grease sometimes gives this dish a bad rap. The trick is to fry the breaded eggplant quickly over high heat, so it doesn't absorb too much oil, then drain on paper towels to remove any excess.

Provided by Martha Stewart

Categories     Food & Cooking     Main Dish Recipes     Casserole Recipes

Number Of Ingredients 10

2 cups fine plain fresh breadcrumbs (see tip below)
1/2 cup finely grated Pecorino Romano or Parmesan cheese (1 ounce)
Coarse salt and freshly ground pepper
1 cup all-purpose flour
4 large eggs, lightly beaten
2 large eggplants, sliced into 1/4-inch-thick rounds
1/4 cup vegetable oil, plus more if needed
Homemade Marinara Sauce
3 cups coarsely grated mozzarella cheese (12 ounces)
3/4 cup finely grated Pecorino Romano or Parmesan cheese (1 1/2 ounces)

Steps:

  • Bread and fry the eggplant: Combine breadcrumbs, pecorino Romano, 1/2 teaspoon salt, and some pepper. Put flour, eggs, and breadcrumb mixture in 3 separate dishes. Dredge eggplant in flour, shaking off excess. Dip in egg, letting excess drip off. Dredge in breadcrumbs to coat. Let stand for 30 minutes.
  • Heat oil in large straight-sided skillet over medium-high heat. (Oil is ready when a breadcrumb sizzles when dropped in.) Working in batches, fry eggplant until golden, about 2 minutes per side. Transfer to a paper-towel-lined baking sheet. (If oil gets too dirty, discard, and heat an additional 1/4 cup.)
  • Assemble the dish: Preheat oven to 375 degrees. Spread 1/2 cup marinara sauce in the bottom of a 9-by-13-inch baking dish. Arrange a layer of eggplant on top, overlapping slightly. Top with 1 cup sauce. Sprinkle with 1 cup mozzarella and 1/4 cup pecorino Romano. Repeat twice to form layers with eggplant, sauce, then cheeses. Cover with foil. Bake until bubbling, about 30 minutes. Uncover, and bake until cheese melts, about 5 minutes more.

GRILLED-EGGPLANT PARMESAN

Grilled-Eggplant Parmesan image

Our light, summery take on classic eggplant parmesan skips the breading and relies on the grill to do all the cooking. Flame-kissed tomatoes and shallots are turned into a quick sauce, then spooned over charred eggplant and gooey mozzarella for a memorable dinner.

Provided by Martha Stewart

Categories     Food & Cooking     Quick & Easy Recipes

Time 35m

Number Of Ingredients 8

4 medium tomatoes (1 1/2 pounds total), halved
1 shallot, halved lengthwise
1/4 cup extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
2 large eggplants (2 pounds total), cut lengthwise into 1-inch planks
1 pound fresh salted mozzarella, sliced into 1/4-inch rounds
1/4 cup thinly sliced fresh basil leaves
1 loaf rustic bread, such as ciabatta, for serving

Steps:

  • Preheat grill to medium-high. Brush cut sides of tomatoes and shallot with 1 tablespoon oil. Grill, cut-side down, until charred in spots, 4 to 5 minutes. Flip and continue cooking until vegetables soften slightly, 2 to 3 minutes more. Transfer to a cutting board. When cool enough to handle, roughly chop and transfer to a bowl; season with salt and pepper.
  • Brush both sides of eggplants with remaining 3 tablespoons oil; season with salt and pepper. Grill, turning once, until lightly charred in places and almost tender, 4 to 5 minutes per side. Transfer to a plate.
  • Top eggplants with mozzarella. Return to grill and cook, covered, until cheese melts, 1 to 2 minutes. Top evenly with tomato mixture, sprinkle with basil, drizzle with oil, and serve with torn rustic bread.

EGGPLANT PARMESAN STACKS

Eggplant Parmesan Stacks image

Everyone loves these stacks of eggplant layered with mozzarella and Parmesan cheese and tomato sauce.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Number Of Ingredients 9

18 eggplant rounds (each 1/4 inch thick and at least 3 inches in diameter; about 3 medium eggplants)
Coarse salt
1 cup plus 3 tablespoons extra-virgin olive oil
3 garlic cloves, very thinly sliced
6 plum tomatoes (about 1 1/2 pounds), coarsely chopped
1 tablespoon coarsely chopped fresh oregano, plus leaves and sprigs for garnish
1/3 cup thinly sliced fresh basil
4 ounces fresh mozzarella, thinly sliced and torn into small pieces
3/4 cup freshly grated Parmesan cheese, plus shavings for serving

Steps:

  • Preheat oven to 425 degrees. Season eggplant with salt. Heat 1 cup oil (about 1/4 inch) in a large skillet over medium-high heat. Working in batches, so as to not crowd the skillet, fry eggplant rounds, turning once, until soft and pale golden, 1 to 1 1/2 minutes per side. Drain on paper towels.
  • Heat remaining 3 tablespoons oil in a large skillet over medium-high heat. Add garlic, and cook 20 seconds (do not let brown). Add tomatoes and 1 teaspoon salt. Cook, stirring frequently, until tomatoes break down and are soft, 10 to 15 minutes. Stir in oregano and basil. (Alternatively, stir oregano and basil into 1 1/4 cups Freezable Tomato Sauce Base.)
  • Place 6 slices of eggplant on a rimmed baking sheet. Top each slice with 1 tablespoon sauce and a few pieces of mozzarella, and sprinkle with 2 teaspoons Parmesan. Repeat layering twice.
  • Bake until heated through and cheese is bubbling, about 12 minutes. Serve immediately, garnished with oregano and Parmesan shavings.

Tips:

  • Choose the right eggplant: Select firm, unblemished eggplants that are about the same size and shape. This will help them cook evenly.
  • Slice the eggplant evenly: Cut the eggplant into slices about 1/2-inch thick. This will ensure that they cook evenly and don't become too mushy.
  • Salt the eggplant: Salting the eggplant before cooking helps to draw out the moisture and bitterness. Be sure to rinse the eggplant slices thoroughly after salting to remove any excess salt.
  • Dredge the eggplant in flour: Dredging the eggplant in flour before frying helps to create a crispy crust. Be sure to shake off any excess flour before frying.
  • Fry the eggplant in hot oil: Frying the eggplant in hot oil helps to create a crispy crust and prevent the eggplant from absorbing too much oil. Be sure to fry the eggplant in batches so it doesn't overcrowd the pan.
  • Use a good quality marinara sauce: The marinara sauce is a key component of eggplant parmigiana, so be sure to use a good quality sauce that you enjoy. You can either make your own marinara sauce or use a store-bought sauce.
  • Layer the eggplant parmigiana correctly: When assembling the eggplant parmigiana, start with a layer of eggplant, then top with marinara sauce, Parmesan cheese, and mozzarella cheese. Repeat this process until you have used all of the ingredients.
  • Bake the eggplant parmigiana until bubbly and golden brown: Bake the eggplant parmigiana in a preheated oven until it is bubbly and the cheese is golden brown. This usually takes about 30 minutes.

Conclusion:

Eggplant parmigiana is a delicious and easy-to-make dish that is perfect for any occasion. With its crispy eggplant, flavorful marinara sauce, and melted cheese, it's sure to be a hit with everyone at the table. So next time you're looking for a tasty and satisfying meal, give eggplant parmigiana a try!
