This is a light refreshing dessert we always had growing up on the 3 holidays. (Thanksgiving, Christmas and Easter) My mom & my aunts would always stay up late cutting up the marshmallows, laughing & talking. I make mine more simply and use the mini marshmallows. :)mmmmmmm Its pretty simple too.

1 (16 ounce) can crushed pineapple in juice
1 (16 ounce) bag mini marshmallows
1 (8 ounce) container Cool Whip

Steps:

  • In a large serving bowl empty bag of marshmallows.
  • Open pineapple and pour over marshmallows, and stir well.
  • Let soak, stirring every couple of hours, to let pineapple juice soak into marshmallows.
  • About an hour before serving, add cool whip, stir well, and place back in refrigerator for flavors to blend.

2 pkg graham crackers, crushed
10 7/8 oz small bag of miniature marshmallows
1/1/2-2 can(s) crushed pineapple (drained)(20oz.cans)
2 c whipped cream, unsweetened
1 tsp vanilla added to whip cream

Steps:

  • 1. 9x13" pan, place two packs of graham crackers into a plastic bag, crush the crackers with a rolling pin or mallet.Put about 2/3 of the crackers in the bottom of pan, save some to sprinkle on top of dessert.
  • 2. beat 16oz.(pint)COLD whipping cream with vanilla until slightly thickend; it doesn't have to be really thick
  • 3. stir the marshmallows into the whipped cream, then stir in drained pineapple, mix all ingredients well by hand until blended. Pour into pan over graham cracker crumbs; spread out with spatula and top with remaining crumbs, about 1 cup. Chill for at least one hour or longer so flavor blends. enjoy

This recipe is from my grandmother. She made it every summer till she passed away, and the thought of it always brings back fond memories. After she died I looked everywhere for it with no luck, until this last Easter when I was looking through my moms cookbooks (She was given all of my grandmothers books). Down on the bottom of a page I notice my grandmothers writing and it was this recipe that she had written in. What a gift! It makes me cry just writing about it. I'm so excited to be able to share it with others and help my grandmother's gift of cooking live on. Hope you like it!

1 cup milk
3 cups marshmallows
2 cups whipping cream (not pre-whipped)
1 (15 ounce) can crushed pineapple
2 cups graham cracker crumbs

Steps:

  • Scald milk. Add marshmallows and stir till melted. Let cool.
  • While mixture cools, whip cream.
  • Fold marshmallows and cream together.
  • Gently fold in drained pineapple.
  • Sprinkle 1-1/2 cups graham cracker crumbs on bottom of a 9 by 13 pan. Spread fluff over crumbs and sprinkle top with remaining crumbs.
  • Refrigerate till served.
