Steps:
- Combine minced garlic in a small bowl with 3 Tbsp olive oil and set aside while preparing your asparagus and gathering the rest of your ingredients.
- Break off the fibrous ends of your asparagus by holding the base end and snapping it wherever it snaps. Discard the ends. I like this method most because it ensures that you won't have any fibrous ends. You can also use a knife to cut the ends off about 1" up from the base.
- Transfer asparagus to a rimmed baking sheet then drizzle and toss it with the garlic oil. Sprinkle lightly with salt & pepper and bake at 400°F for 13-18 mins (depending on the thickness of asparagus) or until lightly browned and easily pierced with a fork.
- While baking, saute 6 strips of bacon, drain on paper towels then coarsely chop. Serve asparagus warm and sprinkle the top with bacon.
ASPARAGUS BUNDLES
Steps:
- Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.
SAUTEED ASPARAGUS WITH GARLIC AND THYME
Come springtime, when stalks of asparagus shoot up from the ground (as if they're celebrating with us!), there isn't much to do to make this easy side dish shine. First, a sauté in the skillet with olive oil, garlic, and thyme coaxes out the natural sweetness of the asparagus, while finishing it with a quick steam until the stalks are crisp-tender locks in vitamins like A and C.

MARMIE'S ASPARAGUS PEA PASTA WITH BACON AND FETA
I found a recipe somewhere on the internet and thought it looked really great, but as usual.. I can't leave well enough alone so I started tinkering and made a hardy pasta dish that is delicious both hot and cold :) I can only imagine how yummy some salmon or even leftover chicken would taste in this as well...(When I find the original poster of my inspiration, I will share it here)

PAN-SEARED ASPARAGUS WITH CRISPY GARLIC
Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

Steps:
- Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. Remove the skillet from the heat, tilt it, then use a slotted spoon to transfer the garlic to the towel-lined plate, leaving the remaining oil in the skillet. Season the crispy garlic with salt.
- Return the skillet to medium-high heat. Add the asparagus, season with salt and pepper, and cook, shaking often, until bright green, crisp-tender and browned in spots, 4 to 5 minutes. Slide onto a platter, including any oil in the skillet. Top with the garlic chips and season again with salt and pepper.
Tips:
- To save time, use pre-cooked bacon or microwave bacon for 1-2 minutes per slice.
- If you don't have asparagus, you can substitute broccoli, green beans, or zucchini.
- Add a pinch of red pepper flakes for a little spice.
- Serve with a side of rice or pasta for a complete meal.
- For a vegetarian version, omit the bacon and add extra vegetables.
Conclusion:
This Marmie's Bacon Garlic Asparagus recipe is a quick and easy side dish that is perfect for any occasion. The bacon and garlic add a delicious flavor to the asparagus, and the lemon juice adds a bright, citrusy note. This dish is sure to be a hit with your family and friends.
