Time 55m

Yield 4 servings

Number Of Ingredients 11

1/4 cup (4 tablespoons) unsalted butter, plus more for greasing
5 ounces bittersweet (non-sweetened) or semisweet chocolate, chopped
1 tablespoon mescal
2 large eggs
2 large egg yolks
5 tablespoons sugar
1 teaspoon pomegranate molasses
1 1/2 teaspoons canela or Mexican cinnamon
Large pinch salt
1 tablespoon all-purpose flour
1/2 cup chilled whipping cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Generously butter four 3/4-cup souffle dishes or custard cups. Arrange on a baking sheet.
  • Stir the chocolate and butter in heavy small saucepan over low heat until smooth. Remove from the heat; stir in the mescal. Cool 10 minutes, stirring occasionally.
  • Using an electric mixer, beat the eggs, yolks, 4 tablespoons sugar, molasses, 1 teaspoon canela powder and salt in medium bowl until very thick ribbons fall when beaters are lifted, about 6 minutes. Sift the flour over the batter; fold in the flour. Fold in the chocolate mixture. Divide the batter among the prepared dishes, filling completely. (Can be made 1 day ahead. Cover loosely; refrigerate. Let stand at room temperature 30 minutes before baking.)

  • Beat the cream, the remaining 1 tablespoon sugar and the remaining 1/2 teaspoon canela powder in small bowl until firm peaks form. Top the cakes with the whipped cream and serve warm.

MEXICAN CHOCOLATE CAKE

Provided by By Betty Crocker Kitchens

Categories     Dessert

Time 1h50m

Yield 15

Number Of Ingredients 7

1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
1 teaspoon ground cinnamon
Water, vegetable oil and eggs called for on cake mix box
3/4 cup granulated sugar
1/3 cup butter
4 to 5 tablespoons milk
3 cups powdered sugar

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or spray bottom only of 13x9-inch pan. Make cake mix as directed on box--except add cinnamon to cake mix. Pour into pan.
  • Bake as directed on box for 13x9-inch pan. Cool completely, about 1 hour.
  • In 2-quart heavy saucepan, heat granulated sugar over medium-low heat 6 to 8 minutes, stirring constantly with wooden spoon and watching carefully, until sugar begins to melt. As sugar begins to melt, stir with wooden spoon until sugar is melted and golden brown. (Sugar becomes very hot and could melt a plastic spoon.) Remove from heat; carefully stir in butter and 1 tablespoon of the milk (mixture will become lumpy). Return to medium-low heat, stirring constantly, until mixture is smooth. Cool 5 minutes.
  • Add powdered sugar to caramel mixture; beat with electric mixer on low speed until well combined. Add 3 tablespoons milk, mixing until frosting is glossy and spreadable. If necessary, add up to 1 tablespoon more milk, 1 teaspoon at a time. Spread frosting over cake. Store loosely covered.

Tips:

  • Mise en Place: Before you start baking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid any mishaps during the baking process.
  • Use Room Temperature Ingredients: Whenever possible, use room temperature ingredients for your cake. This will help the ingredients blend together more smoothly and will result in a more evenly baked cake.
  • Do Not Overmix the Batter: Overmixing the batter can result in a tough, dense cake. Mix the batter just until the ingredients are combined.
  • Use a Springform Pan: A springform pan is the best type of pan to use for this cake because it allows you to easily remove the cake from the pan without breaking it.
  • Bake the Cake in a Water Bath: Baking the cake in a water bath helps to create a moist and tender cake. The water bath also helps to prevent the cake from overcooking.
  • Let the Cake Cool Completely Before Frosting: Allow the cake to cool completely before frosting it. This will help the frosting to set properly and will prevent it from becoming runny.

Conclusion:

Mario Bosquez's Mexican Chocolate Cake is a delicious and decadent dessert that is perfect for any occasion. The cake is moist and tender, with a rich chocolate flavor. The frosting is creamy and smooth, with a hint of cinnamon and spice. This cake is sure to be a hit with everyone who tries it.
