Time 1h20m

Yield 4

Number Of Ingredients 12

¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey
½ teaspoon olive oil
⅓ teaspoon packed brown sugar
¼ teaspoon sea salt, plus more for garnish
¼ teaspoon ground black pepper, plus more for garnish
¼ teaspoon red pepper flakes
4 (6 ounce) fillets salmon
1 tablespoon olive oil

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  • Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.

SHEET-PAN HARISSA SALMON WITH POTATOES AND CITRUS

Sheet-Pan Harissa Salmon With Potatoes and Citrus image

In this 30-minute recipe, harissa, ginger and orange are combined to create a vibrant, spicy marinade for rich salmon fillets. The potatoes and red onion get a jump-start roasting, while the fish takes a quick dip in the marinade. Then the salmon is added to the sheet pan so everything finishes cooking together. This meal looks impressive right on the pan, so serve it from there and cut down on cleanup. You've got better things to do.

Time 30m

Yield 4 servings

Number Of Ingredients 13

4 (6-ounce) skin-on salmon fillets, about 1- to 1½-inches thick
Kosher salt and black pepper
2 to 3 tablespoons mild or spicy harissa paste, depending on your preference
2 teaspoons grated fresh ginger
1 garlic clove, grated
1/2 teaspoon orange zest
1/4 cup orange juice (from about ½ orange)
1 pound small potatoes, such as baby red or fingerlings, cut in half lengthwise
1 small red onion, peeled, quartered and cut into ½-inch wedges
2 tablespoons olive oil
1/4 cup cilantro, roughly chopped, both leaves and tender stems
3 tablespoons scallions, thinly sliced on an angle, both white and green parts
Flaky salt, for serving

Steps:

  • Heat oven to 450 degrees. Lay salmon on a plate, and season with salt and pepper. In a shallow bowl, whisk together harissa, ginger, garlic, orange zest and juice. Spoon the mixture over the flesh and sides of the fish, and let marinate at room temperature.
  • Meanwhile, line a sheet pan with parchment paper (or use a nonstick sheet pan). In a large bowl, toss together the potatoes and onion with the olive oil, and season well with salt and pepper. Arrange them on the sheet pan in 1 layer, leaving 4 spaces for the salmon fillets to be added later. Roast until the potatoes are beginning to brown and are almost cooked through, about 20 minutes.
  • Add the salmon to the sheet pan skin-side down, and roast until the fish is opaque and cooked through and the potatoes are crisp, about 8 minutes more. Scatter cilantro and scallions over everything, and season with flaky salt.

Time 3h

Yield Four servings

Number Of Ingredients 24

1 cup stemmed parsley
6 Serrano chilies, seeded and chopped
1 clove garlic, chopped
1/4 cup olive oil
4 6-ounce pieces of salmon fillet
1/2 teaspoon salt
1 red bell pepper, diced small
2 teaspoons olive oil
3 shallots, chopped
1 clove garlic, minced
1/2 Serrano chili, seeded and chopped
1 1/4 cups low-salt chicken broth
1/2 10-ounce package frozen corn, defrosted
1 1/4 cups cooked black beans
1 1/2 tablespoons arrowroot, dissolved in 1 tablespoon water
1/2 teaspoon salt
2 tablespoons plus 1 teaspoon olive oil
1 small onion, finely chopped
1 clove garlic, minced
2 fresh tomatillos, husked, rinsed and coarsely chopped
1/2 cup cilantro leaves
1/2 large ripe avocado, peeled and pitted
1 teaspoon fresh lime juice
Salt and freshly ground pepper to taste

Steps:

  • To make the salmon, puree the parsley, chili, garlic and oil in a food processor. Season the salmon with salt and rub with the puree. Cover and refrigerate at least 2 hours.
  • To make the corn, heat oil in a saucepan over medium heat, add shallots, garlic and chili and saute until soft, about 3 minutes. Add broth and corn, turn heat to high and cook 5 minutes, stirring occasionally. Stir in beans and arrowroot and simmer 2 to 3 minutes until thickened. Stir in salt and set aside.
  • To make the salsa, heat 2 teaspoons oil in a medium skillet, add onion and garlic and saute until soft, about 5 minutes. Cool. Place in a food processor with the tomatillos and puree.
  • Preheat oven to 350 degrees. If desired, place the salmon in a hot smoker for 15 minutes. Place the salmon, smoked or plain, on a baking sheet and roast until just cooked through, about 15 to 20 minutes.
  • Place 1 piece of salmon on each plate; spoon some corn mixture and some salsa beside each piece. Garnish with red pepper and serve.

Tips:

  • Choose high-quality salmon fillets for the best results. Look for fillets that are firm to the touch and have a vibrant color.
  • Make sure to marinate the salmon for at least 30 minutes before cooking. This will help to infuse the fish with flavor and keep it moist.
  • When cooking the salmon, use a medium-high heat and cook the fish until it is just cooked through. Overcooking will make the salmon dry and tough.
  • Serve the salmon immediately with the sweet potatoes and red pepper salsa. The salsa can also be served as a condiment for other dishes, such as grilled chicken or vegetables.

Conclusion:

This marinated salmon with sweet potatoes and red pepper salsa is a delicious and healthy meal that is perfect for a weeknight dinner. The salmon is cooked to perfection and the salsa is a great way to add some extra flavor to the dish. The sweet potatoes are a healthy and filling side dish that rounds out the meal. This recipe is sure to be a hit with your family and friends.
